Absolutely love this bar, so far my favourite in Hobart. Well-designed menu with all kinds of drinks. The staff are happy to make the drinks based on your personal preference. My friend and I had a great time there. The staff were super friendly and passionate about explaining the drinks to us. I had Spring Rose, which I loved - a little sweet, fruity and refreshing. The fossil inside the tables is quite interesting to read.

This is one of the best looking bars I have been to. It has a fantastic atmosphere and I recommend going at night as the lighting is inviting, warm and cozy. Great to just relax with friends and have a drink. If I lived in Hobart this would be a place I would go to regularly. You have to check this place out if you are visiting. Highly recommended.

Well decorated and well appointed cocktail bar, offering very tasty morsels. Everything that we ordered was delicious and the cocktails were well done. There are a number of small tables that are not that great however the table inserts are rather interesting.

A gorgeous whiskey bar. Location is right on the water. A massive choice of whiskies to choose from with such variety in prices. They also serve cocktails, beers, and gins etc.... a place where any alcoholic beverage will be served to you with a smile and class. Absolutely enjoyed the ambiance, decor and sounds. Left feeling relaxed, happy and walking on cloud 9

Really enjoyed this bar. Cocktails were yum. We sat there with a liver pate board and the antipasto board. Recommend only getting one board as the antipasto board was much more generous than we had expected! Their full menu is available digitally (and is quite extensive) and includes their whole fossil range for anyone interested!

The bar staff were so helpful. The cocktail and spirits menus were absolutely amazing, a great way to try a range of different drinks. Their Tasmanian spirit selection is thorough, and goes beyond the usual two or three distilleries. The free popcorn is very tasty too.

Great vibe. Quiet and chilled. The service was great and you look out over Sullivan's Cove. The wall of spirits was amazing. The lighting in the place gives it a relaxed intimate vibe. Definitely worth a visit.

Friendly and efficient staff. The old fashioned was very well made and there is an extensive selection of spirits to choose from. The decor is outstanding, lots to look at and learn while enjoying a delicious beverage. The layout is good for a drink by yourself or a group of friends ready to tie one on.

Great atmosphere. The staff were lovely. I’m a sherry girl and it’s rarely served properly in a chilled glass when needed- was impressed to see someone got it right! That’s a knowledgeable bartender right there!

This is an amazing bar. I loved the selection of whiskies. I am not a big whisky drinker, but I may after this trip. But you don't just go to Evolve for amazing service, good whisky and water front view. They are all good, but you have some of the best fossils collection in the world. We were blown away with millions of years old dinosaur eggs, mammoth tusks, Siberian bear, etc. When we visited Tasmania, we were looking forward to MONA, instead we were an Evolve addict. I spent three nights in a row, enjoying whisky and fossil collections. This is a must!

Nice quiet cocktail bar on the water. The view can be disturbed by the docked boats, but the interior is warm and quite cosy, even with animal skeletons on display. You're paying mid $20s for a cocktail, while not terrible given the upmarket setting, it isn't cheap either.

The unique atmosphere of evolve makes it well worth the walk over to MacQ1 to start your night or finish it with a night cap. As you walk in the door there is an impressive and stunning dinosaur skeleton inside a glass case spanning floor to ceiling. The rest of the bar is decorated with impressive fossils adding to the atmosphere. The drinks are well presented and priced as you would expect and the drinks and whiskey list are impressive. *If you're a connoisseur and feel like there isn't much on the drinks list you are looking at, ask for the full drinks menu. It's a relatively small space as you might expect from a hotel bar and helps to keep the space exclusive and transient, I wouldn't plan to spend the whole night here. On a busy night you can expect standing room only even after midnight. I would rate this bar 5 stars if not for the pretentious attitude held by some of the service staff. Sorry guys, but you poor liquids out of bottles at premium prices while wearing gold bow-ties, you really can't afford to be rude to customers in that setting.

Wonderful hidden gem! Went here for pre drinks before a dinner and had a winderful time. A great selction of drinks to choose from and in a perfect location. Although the lovely waiter accidentially spilt a wine over me, she went to the extra effort to make sure I was okay and supplied me with towels to dry myself, some complimentary nibbles and a couple of drinks. Accidents happen and I felt really bad for her but it made for a great laughing story between the group of family I was with! Looking foward to checking this place out again for the quailty drinks and service!
