NYE 2021. Same as NYE 2020. Loads of extremely ultra-attractive hot bar staff. Almost painful to order a beer without realising that your life is meaningless and utterly unexceptional. Though that’s just me. Still single. Establishment Bar is lovely, prices reasonable considering it’s topographical situation. At this NYE2021 meetup group for the third year running I came to the Establishment Bar. My hope was to meet a fellow traveller. My good friend in my loveless search Brendon said, well pretty much told me that I have to lose at minimum 10kg if I expected any interest. He’s right. I love beer. The Establishment Bar is one of those Sydney watering holes that look upper class but at the end of the day cater for the mass of uncivilised regular people looking to drown their sorrows in booze and bar food. The chips and chicken wings are average, meaning they’re enjoyable and tasty but nothing original or special. That’s not a dog at the Establishment Bar, it’s merely the observation of a punter who drinks and eats far too much fatty and delicious bar snacks across the city. Great place to observe the beautiful people. A parade of the lovely and hotly sexy and extremely generic lottery winners wearing beautiful well designed clothes. They walk around the bar as if on a catwalk and I for one enjoy the expression of early twenty first century fashion and casual beauty. As usual my efforts at trying to attract a over 50+ mate failed to materialise. I dressed up. Establishment Bar is a great place to strut your stuff whilst sucking down booze. Great environment. Awesome atmosphere and if only I was 10kg lighter perhaps my opportunities for a serendipitous event would have been improved. Drink and be merry because tomorrow you have to pay your bills and deal with your blabbering painful boss. I had fun and left as lonely as I arrived but a good place to be a loser.

Bright and spacious interior which makes it the perfect setting for any occasion - from casual lunch catch-up to corporate group event. Food and drink prices are on the expensive side, but as expected due its location. I ordered the seafood linguine which was a good portion size, however, the pasta quality could be improved. Great cocktails and I’ll definitely consider coming back! ☺️

Went to Establishment Bar for Friday lunch, surprisingly it was not crowded and we got a table easily without booking in advance. Ordered Pan-roasted Barramundi, Pad Prik Khing Moo and rice to share. Food and drinks is ok overall for Merivale establishment.

Booked lunch for a large group, the process was seamless. We were in and had drinks in hand within 10 mins on a busy Friday lunch hour. The menu has a full variety of classics like steak, pasta and schnitty, along with Thai noodles and curries. Every option looked amazing. I would highly recommend the steak and pad thai.

This is the City bar you go to when you don't know the cooler ones in Town. The bar is still slick & grand. But some of the people that hang out & frequent there unfortunately belong in the zoo. It can get too crowded, pushy & uncivilised depending on the crowd. Security very obnoxious. There are more hip fun upmarket city bars in Town to go to.

Great place for lunch. Self serve, so there is no wait. Wide and open spaces for lunch with very cool music to give good ambience to the restaurant. Absolutely loved the meal, had a Thai special dish of the day (wonderful) and the chocolate mousse (also to die for). The inside terrace is amazing with a sense of peace. They also have salsa nights! Without a doubt, one of the best places for a bite in the CBD.

Once you are lucky enough to get past the fortress gates, securely guarded, your night can only get better. Can be busy and take time to get served, however this place has a cool vibe and friendly atmosphere. Great place to unwind after work or enjoy pre dinner drinks with friends. A very lush spacious venue right in the think of it in Sydney. Quick and easy service and great place for a drink and a quick bite. Towards the back there is a space to hire for parties. This looked brilliant and an awesome venue to celebrate an occasion. Would come here again for sure!!!

This place is a little different from your usual cafe it’s sort of a mix of things and positioned glass roofed court yard with a big mirror ball hanging in the centre which glistens in the sun light . The atmosphere is set by a cascading fall fountain with tables either side of entrance. You have the option of a small buffet hear or of the set menu . The staff is a tricky one because some are helpful and friendly and bring good presents but others don’t giving this place the mixed reviews. If you just simple want a good breakfast this isn’t a bad place to try out, I can recommend the banana bread French toast as it’s delicious as I’m sure other dishes are also .

Very chill atmosphere, amazing glass ceiling letting all the sunshine in. It is really a garden. Decoration is equally delicate. I really liked the place. I wanted to try the breakfast selections however they dont serve it after 11. In fact, kitchen is completely closed between 11-12. Hotdog was good. Overall, i would definitely recommend this place. Ps: dont forget to make reservations upfront.

I thought Establishment was pretty average and pretentious. The food and cocktails were expensive and the quality and servings were disappointing. I had heard good things but after being greeted rudely, getting the absolute minimum of customer service and having to use our phone to order, I don’t think I would recommend establishment to anybody. I wish I had spent my birthday dinner and drinks elsewhere.

Great bar, with great cocktails and the bartender made an awesome hot toddy! There was a live band with great music, was a bit loud though. If you want it a bit quieter I would sit in the back!

I came here for breakfast and ordered the bacon & egg roll, which turned out to be more of a deliciously decadent bacon & egg burger. The Garden has plenty of natural light and, being at the very back of Establishment, is surprisingly relaxing and isolated from the constant activity on George Street. While not exactly a bargain, I was pleasantly surprised by both the food and surroundings (you usually get one but not the other at this price point)

The service was nice, the music was fantastic, and the drinks prices are reasonable. Friday evening were mostly corporate people. Saturday night turns into a dancing floor. A must try!

The food and the service have sadly deteriorated a little bit over the years, but still a great venue to catch up with colleagues over a casual lunch (or a casual lunch and beers with other colleagues on a Friday). Tad pricey for what it is, but that is to be expected in the CBD.

Great back salsa nights, always loved salsa night but always had issue with bar lady's, visited last Tuesday outside bar young lady serving I ordered 1 shiraz used to took me 10-15 min to get drinks inside bar(after made order), this time young lady serving not too lazy but she doesn't know why wine glass has the line, she poured under line not even close, next to me stranger telling her go more, but she refused (haha) nothing special to me as known this place never had great service at bar, otherwise music and everything is good as before.

Always busy , always popular, social distancing is clearly not an issue here though. Plenty of Gronks happy to gate crash your conversation just to say hello to your date. So if you do go here with a beautiful woman expect most men to think she's easy and looking for cashed up bogans as the one by one make themselves k own as they flash thier fake rolex and within seconds tell you they drive a lambo or bentley.

Wow, what a great night. Had some drinks with some friends after dinner. Only intended on staying for a couple, but the atmosphere was so awesome, we stayed for hours. They had a themed night going on which was hilarious to watch. Didn't eat there (went to Mr Wong's for dinner which was AMAZING BTW) but food at the establishment looked good. Drinks fairly priced. Great location. I highly recommend this place, but get there early if you want a seat 😉

Went here for breakfast around 0730 hrs on Saturday. I had organic eggs scrambled with some bacon and toast and coffee. Excellent food, friendly service. And most of all the ambience. I simply love this place for having retained the ruined building and giving it a facelift yet preserving it. I am a great fan of architectural character and simply love this aspect here. I am speaking of the courtyard glass roof atrium type dining area on the ground floor. Will I go back here ? Definitely ! Will I tell my friends and colleagues about it ? I already have. . . .

Class location and lively atmosphere. Good for lunch meetings , dates and meet ups. You can choose between sitting inside the main bar or go deep inside to the Garden. And enjoy the fountain and bar there. Establishment makes sure that the merivale standards are matched and also ensures satisfaction of all it's guests. The food servings are quite generous and the staff's hospitality is always at their best. When a restaurant meets quality , it indeed turns out to be the best.

Holaaaa, its a really nice Bar / club to go out for a drink. Especially the salsa night on Tuesdays I can highly recommend, because in the afternoon you have some free salsa lessons and in the night you can show your dance moves you've learned during the class. perfect to have a dance with your friends. For me it is a must do in Sydney.

Nice place that attracts chic crowd. The food is good too. If you are into salsa, this is the place to be at in Sydney. But some nights they charge entry fee 20-25 dollars per person, so keep that in mind. Liqueur is decently priced, not too expensive.

You have to be in the right mood for this place. If you're looking to nab yourself a guy/girl? it's a great place. If you just want a quiet drink with friends, not so much. It really is meat market central, it's like real life Tinder which is good if that's what you want, but if not then you do get to sit back and laugh at all the guys/girls doing laps around the bar trying to get noticed. Service can be slow and depends on how much you're tipping the bar staff. If you're a big tipper you'll have no issues.

This is a nice classy place located on George Street Sydney. It gets quite busy on Friday and Saturday nights 4PM onwards. The drinks are your standard Sydney prices (expensive). But still a nice place to go for a few after work drinks or a drink before going out for dinner. I’ve not eaten here so can’t comment on the food. I have gone up the lift to the other areas which are awesome – however they are not part of The Establishment. Upstairs is a very nice Japanese restaurant and also a bar. Very classy. Lovely bar, super busy on a Friday corporate night (packed with Corporate's, of course). It's a Ryan bar equivalent but less chilled. On a Saturday night, the music is amazing. The night I went, however, the DJ was not up to par and there were plenty of "stops" in between, but people continued to dance anyway. Was a fun, enjoyable night but nothing compared to the Ivy.

Interesting crowd and is very busy for a Tuesday night. Apparently it is for suits working on deals. They have a lot of seating but we only just found one amongst the crowds. Their drinks and food are expensive but I think they are targeting corporates. I would only come here if I had no other option. It is relatively close to the train station. Facilities are clean and staff are ok.

Not my kind of scene generally, but was all good apart from expensiveness. Staff were really lovely and helpful, the bar and atrium area was quite pretty, and ironically because it was New Year's Eve it wasn't too busy either (no views, so everyone moved on fairly quickly). Drinks are quite expensive, ~$11 for a small spirit and soft drink, such as rum and coke or whatever, $17 for cocktails (again quite small). The bar food was tasty.

Pretty poor showing by Establishment on my last visit. A group of 5 ordered starters and mains. Another colleague joined 20 minutes later and ordered independently. The joiners meal arrived first. Our mains appeared over a 10 minute period followed by the starters. 40 minute wait times are not OK in a pub. Food tasted good though.

A big open space which is great when the venue is busy however when it is quiet it lacks atmosphere. Well fitted out with the central bar extending down the middle of the room the highlight. Outdoor space small. Staff rude, the attitude seems to be that customers should be privileged to be served by them. Known throughout Sydney as a place where bankers hang out, so if your looking for a relaxed bar this is not the place to go. Given the clientèle it is expensive. Unlikely to be a place I'd choose to go back to.

Nice venue in the heart of hearts, quite easy to find as it's located on the ground floor right on George street, very nice interior deco, good crowd maybe a bit pretentious and too dressed up I guess (I can't see the reason why wearing a suit going to a bar but I respect it). Busy on Fridays and Saturdays so go there between 22:30 to 23:00 pm to avoid the possible cue. Prices are down to earth (we're in Sydney right in the heart of CBD). The music is inciting people to dance but most prefer to hold a drink, chat or watch around. The staff is cool and helpful.

Wonderful and classy, this is the place for a unique dining experience. The staff is extremely polite and professional: on several occasion they helped us to navigate through their menu by giving extensive explanations on their dishes. I strongly suggest their 8 course degustation menu, wich comes complete with matching wines.

Somewhere different to stay (hotel).....very cool, very hip. Gym is small, I would recommend getting some type of partnership with a local gym for guests (ie guest passes for guest staying at hotel). Then you can convert that little room to something else (or leave as is for ppl wanting a basic basic workout). Liked the different bars...good for bouncing around all night and the access to Mr Wong’s.

The Establishment is perfectly located in the heart of the CBD on George Street. During the day it is quite informal for lunch but at night it comes alive with loud music and dancing. On a Thursday night they have free sparkly wine for the ladies between 5 and 6pm which is great. There is a massive bar in the centre of the pub which is always surrounded.

Hotel: The Establishment Hotel is just amazing. We did a little staycation my partner and I and we got one of the suits. Their breakfast menu is bomb and I can highly recommend their avocado toast. I always go for avo toast and I must say that they serve the best I've ever had. I just can't forget it and will be back very very soon again just for their breakfast. The mini bar was great and you get an ipad for music and Netflix as well. The Establishment Hotel has their own little bar (not the bigger on ground level) next to the lobby which is cosy and where they serve great cocktails. Bar: So now to the bigger Establishment ground floor bar/club. Accoring to me there is not tables/lounge places for how many people they let i and there is always a struggle to get to the bar.

An amazing venue to relax with friends over breakfast or brunch. However I get the sense that this place rests on the laurels of the venue alone. Food was passable but nothing special, and the service was intermittent to say the least. The menu item I ordered wasn’t available, which I was told as I ordered, leaving me to choose the ‘buffet’ as a last resort. I say ‘buffet’ because they actually refer to it as ‘breakfast from the table’ which is actually more fitting. A handful of stale cereals, a few pieces of fruit, some warm yoghurt and a selection of pastries. For $18 it’s not expensive, but certainly isn’t the five star breakfast you’d expect from a luxury hotel. With good company I did actually enjoy my morning here, however not sure I’ll be back.

Very tasty, the chilli scrambled eggs with prawns was excellent. My daughters loved the share table with yummy pastries and fresh fruit. Try not to think about the nightclub that it was the night before. A fantastic little jungle oasis in the heart of the city - excellent for lunch or a quick snack. As part of the Establishment group you know the service and quality of the food will be excellent - although you do pay for it.

Setting is really pleasant. It's an Atrium area on the ground floor with considerable amount of greenery. Glass ceiling offers nice view of the sky overhead. Coffee was excellent. Got a French press carafe and drank it black with cubes of brown sugar. Service time was really slow. Bacon, eggs, and potatoes shouldn't take half an hour to prepare. Our trio got served individually, so the first person was halfway finished by the time the last person was served. Either the kitchen staff few in number or horribly inefficient. Food itself was pretty solid. Got the "Establishment Breakfast": eggs, bacon, sausage, potatoes, toast, mushrooms, baked beans, tomato, spinach, and mushrooms. Potatoes were so-so and eggs were a little runnier than I prefer, but rest was solid. Sausage was a dense, slightly chewy texture with really nice flavor. So on the food and staff, a solid 4. But the incredibly slow service warrants a deduction. If you are in no hurry, it's a very nice place for breakfast.
