Really enjoyed lunch at Silvester's, the food was delicious. The crab and avocado roll was a great way to start our meal, the meat for our main dishes were really tender with flavours that complimented it well. Desserts were fun with different layers beyond what you could see. All topped with friendly service, I would go back for dinner!

We ordered 2 Sydney rock oysters each, they we so so fresh, a main each and two desserts to share.
I had the slow cooked gorgeous beef cheeks bedded in the silky yummy mash & fig sauce. We shared two sides as well. One of the dish was a sirloin beef and it looked kinda boring it had nothing supporting it but a small cup of sauce - just saying.
This night was accompanied with a nicely chilled bottle of Sav Blanc.
Over all very nice fine food and service. Kids friendly is a bonus! Thank you for the complimentary desserts too. 👌🏼

Good service, fairly tasty food, some dishes were overly salty. Highlight was the matcha desert. Portion size is on the smaller side. I would expect more for the price, although it can be good valued if on a special deal.

The place is located very close to Circular Quay train station, at most a 5 minute walk.
The place truly is fine dining and the customer service is exceptional. All the staff were extremely nice and professional. Our waiter Brenda, she was extremely courteous, friendly and gave us great recommendations on what to order and explained to us nicely how the menu worked. She would also continually check up on us just to make sure that everything was okay.
The two entrees that we got were the Vannella Burrata which is like a creamy cheese with a similar texture to mozzarella with zucchini flowers and confit zucchini. We also got the Rockliff Spanner Crab which was wrapped around in avocado and was extremely delicious.
For the mains, we got the Glacier 51 Toothfish, Berkshire Pork Cheek & Hervey Bay Scallops and Riverina District Lamb Belly all of which were extremely delicious.
The fish was well flavoured and tender, the pork cheek was not rough and the lamb belly would just simply melt in your mouth. The lamb does have a bit of a gamy flavour but for me personally, I didn't mind it.
For desserts, we got the Uji Matcha Lava Tart, Milk Chocolate & Peanut Butter Ganache and Blood Orange Sorbet all of which once again, were faultless and delicious.
For the Blood Orange Sorbet, it is layered with some white chocolates at the bottom, followed by some cake and panna cotta followed by the sorbet. There's also a special spectacle for at the table as well with the waiter pouring liquid nitrogen into some coriander and crushing it to make a fine coriander powder to add to the top as well.
I'd definitely recommend this place if you are looking for some fine dining around Circular Quay and celebrating a special event or occasion. If you're planning to go here, definitely expect to pay a quite a bit but I assure you that you wouldn't be disappointed.

Came on a quiet Sunday night. Sylvester's had a calm and pleasant atmosphere. Service was lovely. Food was amazing and executed so perfectly. Tried all the desserts. Enjoyed them so much, forgot to take a picture - the chocolate/peanut butter one was a bit average but the rest were so so good! The cherry on top were the cutest little petit fours which could have been a dessert themselves on the menu. Definitely will be coming back.

Excellent atmosphere.
Tried the pork belly special. I don't recommend it since, unlikely other pork bellies, it's mostly fat and very little meat. I can usually afford to scrape off the fat off the pork belly, however, in this case, I would only have the crackling if I had done so.
The taste was very nice though. Perhaps a little less salt would have been better.
Mushroom side was excellent. A good variety and quantity of mushrooms.

Within the Sydney Harbour Marriot is Silvester's restaurant, it is easily accessible through the hotel lobby. They have a Parisian Chef Raphael Szurek with experience working in Michellin Restaurants around the world. With an open dining area and kitchen you can see the chefs in action.
Silvester's restaurant is dedicated to using fresh local produce, we enjoyed a a glass of wine with our tasting, including a Seppelt Wines reisling, a Fickle Mistress pinot from central Otago NZ and a Saltram Barossa Shiraz. The wine paired nicely with a quality charcuterie board with a mix of cured meats including a delicious bresciola and fennel salami. We also tried the spanner crab and avocado roulade topped with grape fruit. It was nicely presented, however a little pricey for an entree.
For the main the toothfish and braised beef cheeks were both tasty options and prepared to perfection. For dessert a deconstructed pavlova, an Australian classic that would appeal to International visitors.
It does feel like you are dining in a hotel, the dining space is a little generic. However the open kitchen adds to the experience as do the waitstaff who are personable and provide quality service. There are quality menu options with experienced culinary skills on display and be prepared to pay a little extra for this.

Went here for dinner and tried the new summer menu by the Chef de Cuisine Raphael Szurek, and loved it! Most recommended are the Pork Belly or the squid ink risotto. The venue is classy, lovely for a date night, or even business & family gathering.

First time been here using #TheForkAu App. The interior of restaurant is beautiful as you would expect being inside the Marriott Hotel.
The staff are attentive, although I think they're use to dealing with tourists more than local dinners, we had numerous waiters coming to our table but didn't take our empty plates away till we ordered desert. So maybe that's something for management to look at training staff in that respect. It was only downside to experience.
Now the food Omgawd a must thanks to other reviewers is "Grim Brothers Beet" Salad it is absolutely tasty. As well as our other dishes like Braise Wagyu Beef Cheek and can't go wrong with fish. We also had oysters and what's cool is the kitchen has vertical garden where see chef plucking the plants or herbs for your dish.
Would I reconmend most definitely and would come again if they had special on #TheForkAu app or special lunch /dinner with friends/family.
I should also like management to acknowledge the young gentlemen on the front desk (blonde brunette guy) he perfect for interacting with people, I wished I got his name but we had dinner Monday 15th July 6pm. He was most professional.

If I could give 3/5 stars, that would be more appropriate.
The entree and mains were both fantastic, the flavours of the spanner crab and avocado together with small slivers of red grapefruit were complimentary and the tenderness and sweetness of the beef cheek met with the expectation of a restaurant that prides itself of meat dishes!
However, the sides of broccolini and shoestring fries cooled down very quickly so I could only make it halfway through both of these (my thinking is that the serve size was too large).
I was left sitting with empty (and half finished) plates on the table for what seemed a long time given there were six wait staff on the floor.
The alcohol free pre dinner cocktail tasted more like a glass of sugar syrup than the promised pear, mandarin, agave, rosemary, ginger beer. I was disappointed as I enjoyed this particular drink that last time I dined at Silvester's and the individual flavours were more distinct.

Third time being here and it never disappoints. The menu changed slightly but it's still very enjoyable. The avocado spanner crab roll was executed beautifully. "Squid cabonara" was interesting. Toothfish is our favourite and we really love the new way with dashi. Definitely will be back next time! And thanks for the complementary petit four.

Service was decent, I was expecting to be given more advice given I was asked of it was my first time here. I didn't get the advice that serving sizes are small and no bread is provided so please order more. Made me look cheap after the food arrived. That said the complimentary petit fours were very tasty, which helped ss the broccoli and wagyu was below par. However, the sawtooth was very well received.

Do you want to impress your romantic interest or loved one? Because SIlvester's has got you covered! From the get go, I knew this was going to be an amazing experience that would impress my fiance. AND IT DID! Just to give you an idea, here are some of the key points I want you to take away from this review:
- The waiting staff are top notch! Knows exactly what you are thinking. The way they explained the menu and the service provided was impeccable. The proactive attitude was key and that was what made the experience so memorable.
- The food... oh my. They're masterpieces put together by a culinary artist. The Tajima waygu was cooked perfectly. Toothfish was to die for - the sauce was so well balanced. The dark horse was actually the Grima Brothers Farm vegetables because the portion was just so generous and you could definitely tell it was top notch produce. They were root vegetables cooked in a way that accentuates the natural flavours - nutty and fresh! For dessert, I could not decide between the Uji matcha lava tart and the pavlova 2.0. When they say 2.0, they mean 2.0 - a beautiful deconstructed pavlova that highlights the flavour of the raspberries. So you wonder, why I'm writing such a long review. It was because I was so inspired by the whole experience. It was my first time going to a restaurant with an open plan so you could see exactly who and what is being cooked from your table. But to be honest, I would come back here regardless of whether or not it was restaurant month. I've already booked my next experience. So go and get yours too! Many compliments to the chef. See you guys again soon!

My husband and I came for the truffle dinner and had a wonderful time. The ambiance was great, I loved the music and the food was delicious. Not only were the portions generous, but they were very balanced with notes of truffle rather than something very heavy-handed. I have now dined at Silvester's several times. The food and service is always excellent. This time I celebrated the birthday of a friend. Everything was charming. The atmosphere is conducive for a long, lingering dinner. We shared everything we ordered thus increasing our ability to taste a number of entrees, sides and mains. I particularly would suggest try any of the fish/seafood options as well as a side of the mushrooms or the tomato salad. It's not often a hotel restaurant is this good.

It was an excellent night and the staff humored my children over their shows of desserts.
The food was well presented. The beets salad was a delight by the addition of sorbet. The pate on brioche was divine. The beef ribs were delicious. What i didn't enjoy were the flavors of the pork cheeks (the rest of the main was yummy) and the rice crisps that accompanied the tuna tartar. Surprisingly those crisps tasted stale?!
I especially appreciated the service. Some of their wait staff were so entertaining!

Absolutely wonderful food! Highly recommend it. We went on Saturday night for a late night reservation at 9pm. Booked through dimmi. The staff was amazing and attentive and the food was great too! Really awesome balance of flavours in both dishes. We had the White Tooth, Flap Steak and the Tuna Poke. Highly recommend all three dishes. To top it off - even though we didn't order dessert - they gave use free mini desserts to have with our coffees. Will 100% be coming back. Thank you so much guys!

Had the beetroot salad, lamb belly and champagne peach sorbet. Every dish was excellent but the beetroot salad with its tangy beet sorbet was the stand out.
I also had breakfast here and it's possibly the best buffet breakfast in the city. The only let down was the coffee quality.

Enjoyed a single course lunch for two, with sides. Excellent advice regarding wine pairing, including a taste of the two main contenders. The wagyu beef was superlative, with a marrow sauce of great richness. A lovely range of texture and flavours, and the mushroom side was an excellent combination. The lamb was also a first rate dish. The food is up there, with a wide variety of choices. Food is not a problem at all. What is different is how this place is operated. This restaurant does not feel like a Marriott hotel, it is more like a restaurant. Service is formal, but atmosphere is casual. A lot of the wait staffs are clearly new to the industry (young graduates), but they do try their best, and generally service is good and don't really make mistakes. As the restaurant is in the middle of the hotel building, there is no ceiling as such (except the actual roof of the building), sound is not being bounced back from walls and ceiling, this is a perfect place for conversations.

We had a lovely experience at Silvester's. The staff were very attentive, and certainly accommodating. The lamb rack and spatchcock were done very nicely, however the duck fat potatoes could be more crisp and have more flavour. The atmosphere was nice, but hotel guests are passing by. Fantastic service! We went as a group of 6 for dinner to celebrate two people's birthdays. We were seated as per requested and the waitresses were very lovely and accommodating towards any changes that we needed to make. They also gave us a little birthday surprise towards the end. Overall it was a great experience :)

Had a pretty average experience here. Entrees were very good, as was the wine list, but the mains and desert were somewhat underwhelming. The John Dory was nice, but it was overcooked. Restaurants like this should not be overcooking fish... The beef cheek was nice too, but the execution of the dish was a little odd. The duck fat roast potatoes were not in the least crispy. The deserts seemed a little off too, and the smoked ice cream with the chocolate was completely overbearing. Wait staff also very mixed - one waiter was wonderful, but another was arrogant and gave us the wrong information about multiple dishes.
The food is certainly not bad - it's good, but it's terribly overpriced for what it is and it was disappointing that most dishes we had were just a little bit off.

Very nice environment, we both liked the crab meat entree very much, the food in general is better than most of diner we have been recently, very nice experience. Except for the fact that waiter put my coat on the back of chair but just left the end of coat on the floor and I have seen he did the same for other guests too, I also saw later a waitress fixed the coat for 1 lady, which I guess can be improved.

Pros amazing food and service, thank you Barbara for your kind service. each course was delicious, i had requested a set menu put together to cater for our group and the chef was able to do this for us.
Cons needs a bit more atmosphere. when i arrived i was chased down by the waiter who explained that i was to pay for 13 guests when i had confirmed on email more then 48hrs beforehand that it was changed to 10 guests only. he insistent i paid for 13 guests. this issue was resolved by the chef... dampened the mood at the start but hey its the festive season!!!

Went there on Saturday night for dinner and the food was sensational. The let down was the service side of things. Understanding our waitress was very difficult to the point we would have to ask her to repeat herself 3-4 times. Also at the end of our meal I was trying to get someone's attention to get the bill issued and 2 wait staff where too busy talking to each other at the front counter and couldn't get bothered to look around to see if anyone wanted any sort of service. I had to walk up and pay at the front counter as our car was waiting for us. Get the floor staff right and this place would be a gem.

I visited here recently for the first time, at lunch. Overall my experience was quite good, although I must admit to being somewhat disappointed with the size of the food portions, compared to the rather large plates they were served on, and the prices that were charged for each meal! The food itself tasted quite nice, but there definitely could have been more of it! The service was somewhat hit and miss - sometimes the staff were quite attentive and other times not as much. The restaurant is pretty much inaccessible to persons with mobility issues, other than a rather small and clunky platform lift, which doesn't allow for much independence.

Food and service was pretty average for a 5 star hotel. There was only 1 waiter we encountered that provided the 5 star service. The whole sharing banquet experience took about 4 hours to complete with a long break in between each course. Mains were served luke warm and was not cut up, so we had to split the mains ourselves. The sides were piping hot though.

The difference between good and great restaurant is sometimes as simple as how you feel when eating there.
Our dining at Silvester's was memorable!
Great tasting dishes were met with amazing service! The first was that they gave our kids little plushies, then the waitstaff's knowledge of halal vs non-halal gelatine and lastly since it was getting late at night, they delivered the dessert in record time.

Silvester’s was far beyond our expectations. Food was amazing, generous servings and very well priced. The staff were friendly, well informed regarding the food and wine but in no way felt overbearing whilst we enjoyed our night. We sat at 630 and didn’t leave till after 1130, and we didnt feel that we had to rush off. The staff even provided a complimentary dessert dish to help us stay longer! We did not feel uncomfortable with guests in the hotel passing by - we didn’t even notice - and the restaurant was quiet enough to talk without yelling (even though it was a Vivid weekend)! We were there to farewell a friend and we couldn’t have chosen a better place to do it. We will be back and highly recommend you try it!

Fine dining at an affordable price. One of my favourite restaurant in Sydney. Everytime I go back I order a different dish and its always amazing. If you ever go try the Bay Bug to start off, Wagyu as your main and the orange sorbet with olive oil cake. Trust me, wont regret it!

To be honest, I think the food isn’t that great. We ordered Pork Cheek and Wagyu Striploin as it is very popular from the reviews I’ve read before going there. They were all dry and not flavourful. To be honest, my home cooked mash potato is way better than the mash that’s in the Pork Cheek and I am not a professional chef. I was quite disappointed because we chose this restaurant for our post valentine date but after finishing our food, we were too quick to leave the place. There’s nothing about it that will make you really leave the place a lil bit longer. Place was so boring and there was no aircon. The service is poor. Even if there were only few people eating, our waitress didn’t even bother to check on us if we still want some more water or is there’s still anything we need. For the record our water glass was empty already ever before we finished our food. If there will be no improvement to the ambience, service and food, I don’t think this restaurant will lasts. This is my very honest review.

Love coming to Silvester’s Restaurant as it never disappoints! Chef Raphael is an innovative and creative chef and his dishes are a feast for the eyes as well as the palate . The service is excellent and

Had Xmas lunch at Silvesters. Pricing was reasonable for Xmas day, would have preferred it to include more champagne but we got one glass on arrival. The venue was beautifully decorated in xmas theme. Food was amazing and included a lobster and sashimi station. Staff were attentive and helpful. A hidden Gem for good value fine dining. We ordered the spanner crab and the kingfish as entree n they were just top notch.The best n freshest kingfish n crab ever tasted. Our mains were beef ribs slow cooked , Tajima wagyu beef and the toothfish were all done perfectly delicious. The pork cheeks with
hervey bay scallops was delicious too but just a bit too salty for my liking but still beautiful with the right pairing of lentils n mash n gravy. The blood orange sorbet tofu panacota n the nitrogen coriander crystal was sublimly refreshing n the best smooth n clean refreshing sorbet ever tasted. A must try n the matcha dessert too. Only reason I gave 4 stars instead of 5 was occasionally had to ask staff to top up our water but other than that they were very attentive Overall very happy n will be back! Highly recommend!

i had an amazing experience here with the most friendliest staff. This was a surprise birthday dinner for my partner so i tried to call them three times but no one answered the phone so i emailed them asking them to set a birthday message on the dessert as surprised and they replied within the day. The Meals were fantastic! But the service was appalling! Except for the Lady who took our order; she was the only professional staff member the others didn't look you in the eye, put on false smiles, very poor service; lost in what they should be doing! When we arrived instead of seating us or looking to where we should be seated she asked us to take a seat in the lounge area, why? We get seated at our table a minute later, so again, why? This is such poor service; staff in a hatted restaurant unable to preform more than one task... Then, lady holding up all staff talking to them about roasters. At one stage there were four staff members at the register; after approx. 15minutes we hadn't been asked what we would like to drink! Cutlery not set correctly, so waiter staff leaving meals in front of the wrong people. For a hatted restaurant, all should be great! not just the food...
Ambience, very poor, we get we were in a Hotel but really, why such small tables and dirty stained chairs!? and why look like a Hotel/Hatted Restaurant ready for buffet service?
Oh, and we had a drink at the bar before our meal; metal straws and huge chunks of ice; not pleasant to drink our cocktails.. There is no way we would drink out of a metal straw, how are they washed? Are there germs within the straw? left over saliva from other people using the same straw? and metal to the mouth while drinking, not very pleasant at all... We asked for paper straws, there weren't any, no other option!
But with all that said, as mentioned, the food was fantastic!

Had a very pleasant dining experience here on a Tuesday night. Some dishes like the Morton bay bug and scallops dishes were very nice. The wagyu flank lacked sauce and flavour and was a bit dry for medium rare, served at room temperature which was odd and the risotto didnt stand out either. I like truffles and I ate truffle dessert with a new menu.
