Great bakery and coffee place with a delicious selection of sweets and amazing bread. You can also see the work of the bakery trough the windows behind the counter where you can see how they create there fresh and yummy breads.
Ps: they also sell Market Lane coffee in bags at the counter it is one of the best coffee rosters in Melbourne.

Ok. So I've spent the past 4 weeks making it my job to review cafés in Hobart in order to find the best one. And you guys win, hands down. I've been to 15-20 cafés and for best overall coffee quality, pastry, and atmosphere it's YOU. The morning buns...are just...🥲 the best things ever. I even made an IG post about it (@ka_bbury) with honourable mentions listed too, but YOU GUYS 😭 Such a great place! I had to leave Hobart but I'm already dreaming of your pastries ...forever in my heart.

Went here twice during our stay in Hobart, wish we discovered this place earlier! Always busy but the line moves quickly. Seating is very limited (6 seats).
Loved the almond croissants, brioche and the salume sandwich. Batch brew was stunning, but give the espresso coffees a skip.

The bacon and egg roll is fantastic - I usually love just a traditional bacon and egg combo, but this one was anything but traditional and it blew me away. Love the creativity guys, keep up the great work!

I hope you have a sweet tooth, the hot cross bun had nice spice with plump fruit if the glaze was a little too sweet but a nice afternoon treat. Unfortunately the coffee wasn’t such a hit, it was rather bitter that no sweetness could disguise.

their Almond Croissant is amazing!! it is a filled croissant and was just an absolute delight to eat! i also got their Tosca Bun and absolutely loved every bite! Coffee was great and the staff was very quick in service and ready to help your requests with a smile!

Walked past this wonderful bakery and had to stop and grab a pastry. You can see the kitchen behind the store making all the fresh goods. Everything looked exquisite, I tried a danish and an almond croissant. They were perfectly flakey and not too sweet. I would eat one everyday if I could! Coffee was okay too. They only have a few seats so it is mostly take away.

The food items we tried from here were all pretty good, particularly the lemon-something flavoured cake. The drink I got on the otherwise was very average and I waited way too long for it. Actually the drink was ready and sitting inside for a while before it was served to me. My companions both received their settings well before me. Get the food, don't recommend the drinks.

Another wonderful experience here in Hobart. We walked past this little Bakery a number of times before finally needing a little fix of donuts. Luckily for us the donuts were all gone so we had to have the white chocolate and apricot cookies with our coffee. Both were fantastic. Won't be walking past anymore. Great little place. Hands down the molasses rye is the best bread in Hobart and there are outrageously good bakers elsewhere here in other bakeries but this is my all time favourite loaf. This bakery is very good but the chai is not fresh tea and that disappoints me as a tea drinker. Why have old pre brewed and nottled chai? Tea is tea everyone wants fresh tea? Surely?

The only thing wrong with this place is that it is in Tasmania and I am not! Excellent bakers of both breads and pastries. The Morning bun is worth getting fat for (don't think I've ever written or even though that before). One of the very few bakeries where I am happy to buy the bread if I am not baking sourdough myself - add great coffee into the mix and I'm feeling VERY aggrieved that I won't be there this weekend - fingers still crossed though that the state Premiers get their < insert your word here> together and I'll hop on a plane Thursday morning - first stop Pigeon Whole Bakers.

Pigeon Whole is amazing.
I had a plain croissant which I ate immediately. It fed both my tummy and my soul; it was flakey, light, and well structured all at the same time. In a word, heavenly.
I also got a danish to save for later, and after 10 hours of riding around in my backpack, it was still crispy and fresh and devine. The balance of fruit to creme to pastry was exquisite.
I've had a lot of pastries in a lot of places and these are an absolute stand out.

This bakery is so cute and has delicious food! The almond croissant was amazing and they make hands down the best chocolate cake over ever had. We got some of their cookies to take away and they have slightly different flavours, like oatmeal, apricot and rosemary, which were absolutely delicious and we wished we had bought more. They only do batch brew coffee, which is really good but just a heads up you won't be able to get a flat white here!

They are always working late into the night when you walk past and the bread and pastries that come out of that kitchen are magic. Interestingly they don’t do espresso coffee, so perhaps they are focussing on their strengths (pastry) and not being distracted by trying to do it all.

Surely Hobart's best almond croissant (and I've tried a lot of them on this trip). This is a proper bakery selling whole loaves and sweet treats. There's a small space to sit in and have a filter coffee but no espresso machine. We tried most of their baked goods over many visits and everything was top notch. You know they are doing something right here when all the other trendy cafes in town list Pigeon Whole as their bread suppliers.

We had a pot of Marco Polo, almond croissant, a sandwich, lemon tart, and their morning bun for brunch while we were waiting to check in to our hotel in Hobart. We were quite satisfied with what we had and felt great that the prices weren't too steep. The pastries and bread were seriously amazing. I saw a tip to go there on an inflight magazine and lucky I wrote it down. It turned out to be pretty close to where we staying so we went in to give it a try and it didn't disappoint! However, limited seating and choice for drinks. We would have gone down several times if not for having to try other/new food during our short first trip to Tasmania and Hobart.

Pigeon Whole Bakers is by far the best source for fresh, delicious baked pastries in all of Hobart. I stumbled upon their building as it doesn't look like too much on the outside. Once inside, I tried the pain au chocolat and I can honestly say this is the best pain au chocolat I have ever had in my entire life... and I've been to France. So flakey, just the right amount of buttery, and chocolate in the centre tops it off to perfection. I have been coming back for this gem of a delicacy weekly ever since. Be warned, the pastries, and croissants in particular, are so good that even if you arrive two hours after they open, you may be out of luck. I've missed out on my go to favourite twice and a have had to settle on the fig danish instead (also very delicious). Be sure to get there nice and early when they open so you don't miss out on the best of the best. 10/10 would recommend!!!

Gorgeous bakery set in a glorious old building. Really only made for take away but they do have a couple of seats where you can munch on their glorious wares. Had the caraway seed bagel with salami and cream cheese. So delicious! My parter has the meatloaf slider with sauerkraut. It was so good he immediately ordered a second. We are down here for Dark MoFo and on our way back from a show at around 1am. For some reason all the take away shops were closed, however as we were walking past we saw a massive line up at the outdoor service window at Pigeon. They were serving hot salted beef bagels with mustard and pickles. DELICIOUS! They are very smart and savvy operators who know how to maximise the advantage of having such a large festival in town. I hope other operators take notice and follow their lead.
