Pablo & Rusty’s is a great example that specialty coffee is much more than just a superior taste experience. They are committed to making the world a better place: “We source and roast the most delicious beans in the most sustainable way possible. We are a B Corp certified company and invest in tree planting and rebuilding biodiversity hotspots. We run our factory on solar and work closely with farmers, with the goal of eliminating waste in the coffee supply chain. We love coffee and our intent is that with every sip, we are doing good together.”
Last year they shared their first Impact Report: “We know what we measure is what we improve. This report has been put together by our team members from various departments. It gives an insight into who we are and what makes us tick, our current and past efforts to minimise our footprint and our goals for the future.”
I enjoyed a juicy Kenyan filter coffee: Kiriaini (Ndiara Coffee Factory); fully washed; Batian, Ruiru, SL28, and SL34. According to P&R, this coffee is a perfect example of the coffee communities coming together in Kenya for the common purpose of providing them with the best possible quality of coffee.
I also got my Huskee cup. Huskee is a cool looking and durable reusable cup, that is made from coffee husk. And the best: Huskee is now also a Certified B Corporation!

I ordered a BLT tostie, a cold brew and a flat white.
The cold brew was balanced and the flat white was smooth.
The BLT was good as well. I would say I like the bread and the sauce.
Super friendly service. Even though the barista with her mask on, you still can tell she got a smile on her face every time when you talked to her.
I browsed the whole menu, I would say the price of the food was a little bit pricey.
But I love their coffee, so definitely give them a 5-star rating.

Came here during weekday lunch time. The place was full of customers but service was pretty quick.
We didn’t realise they don’t serve all day breakfast hence we ordered two meals from the lunch menu: ‘Seared Sustainable Fish’ and ‘The Angry Bird’.
The fish of the day was kingfish served with Jerusalem artichoke purée, roasted brussels, pumpkin, black quinoa and burnt honey dressing. Absolutely healthy and delicious!
The Angry Bird also didn’t disappoint. Buttermilk bun with chilli glazed fried chicken, kombu mayo, butter lettuce and pickled daikon.
Coffee was awesome.
They are now also open on Sundays from 9am - 3pm.

Would come here again. Came here initially because I saw a photo of their haloumi salad on google reviews and thought it looked amazing- but it's only for lunch so I settled for breakfast instead. Got their granola which I don't really like, too coconuty and dry for me! Had to order two cups of coffee in order to stomach it. Just kidding, I just like to drink coffee. Coffee here is good-can't really go wrong with coffee in Australia in general. The truffle egg was good though-not by itself, I added an extra toast to have it! Happened upon this coffee place while trying to find a place to eat for breakfast. There was a great selection for breakfast items. I ordered the grilled halloumi with zucchini blossoms, black quinoa kale and smoked almond tabbouli, and artichoke and Beet hummus. It was so delicious. I would definitely come back.

Beautiful decor with wonderful outdoor seating area and perfect, hearty dishes and cutlery to complement their unique, balanced flavors and textures. I've both been to the venue several times to eat and have been buying Pablo and Rusty's coffee beans to brew into espresso at home. What I can say is - whether you are dining in or purchasing beans for home, Pablo and Rusty's won't disappoint.
I am a coffee enthusiast who orders beans from different places every month, and out of all the beans I've tried, Pablo and Rusty's (from their various espresso blends to their single origin subscriptions) consistently remains as some of my favorite beans. Just now I brewed their Pioneer blend which left a dulce de leche aftertaste in my mouth - yummy!!
Dining in the venue is also a wonderful experience. My haloumi salad was delicious and so wonderfully plated like a fine dining meal. I've had several other meals which were equally as delicious and beautiful.

One of my favourite coffee spots in the CBD, helped out by a great selection of food offerings. Access to a great bakery goes a long way: high quality bagels, croissants, bread for toasties. I also love the ordering system the team uses here, very handy especially in these contactless times. The coffee flight is one of the few I have found in Sydney, and an excellent showcase of the great coffee on offer by Pablo & Rusty's.

What a yummy brunch this morning! I ordered the hang over and it was so tasty. My poached eggs were cooked to perfection and the sauce was delicious! My go to for a caffeine hit - coffee is amazing and they roast their own beans, plus everything I’ve tried off the menu is absolutely delicious (go for the beef & mushroom ragout on toast if you’re a mushroom fiend like me - I promise you won’t regret it). I have two very different experiences to review for P&R's, eating in and also getting their takeaway porridge. Eating in was fantastic. The filter coffee was nicely fragrant and came in a cool quick-fit glass vessel (the chemist in me always gets excited with that sort of thing...) and the zucchini fritters with poached eggs, tomato relish and fresh baked bread was delicious. As it appears that their menu changes I will definitely return to eat in again. It is also definitely pleasing to know that they know their coffee well and aren't afraid to provide advice to customers on the best way to enjoy the different beans. In this case I was recommended the best beans to match a macchiato and was not disappointed. Getting take-away food on the other hand did not turn out so well. I bought the takeaway porridge with poached plums and pistachios. Now I'm not sure if it was because it took 30 min to actually get to my desk and eat the thing, but by that point it had become one slightly vanilla flavoured single solid gelatinous mass. I am tempted to re-try this again without the long commute as everything else I have enjoyed here has been excellent.

Pablo and Rusty's is a very inviting place with its natural wood ambiance, lots of plants and upscale coffee shop feeling.
The food was amazing overall. I tried the heirloom tomatoes with avocado, cheese, on sour bread and an extra of poached egg which I totally recommend. The sourbread was crunchy on the outside and soft on the inside. The avocado spread on top of the bread, the tomatoes, and cheese, in combination with all the condiments and extras combined was an explotion of flavors and textures. Don't think this is a simple avocado toast, so if you really like avocado or tomatoes I would highly recommend this.
I had a kombucha on tap that was very fresh and tasty. I didn't try the coffee at this place which is their main thing, but if I come back I'll give this review an update.
I had a Nutella muffin for dessert which was very good but I would try something else next time.
The staff was very friendly and attentive.
Definitely worth giving it a try.

I went back right before leaving Sydney, and I gotta say it was as amazing the second time around. I did try the coffee this time, and I gotta say it was really good!

Love this place - it's my favourite coffee spot on this side of town. The coffee is great quality - but unlike most coffee shops they have a great system for moving customers through the store quickly.
The decor is great - it's a place you can sit back in for hours to watch the passing traffic. it's got a Seattle trendy/chic but still rustic feel. It's bright and airy but still cosy.
Food is good too - which is surprising given that the "kitchen" is really small :)
Staff are always super friendly, smartly dressed and efficient.
Just watch out for the glass exit door - in certain lights it can be difficult to see whether it's open or not!

Pretty decent coffee - I liked it - and it has friendly staff and fairly quick service. It is also across the road from Mary's burgers which is really good! There's a piazza nearby, at the ANZ so you can sit outside in the public areas and relax. It's a little bit pricey, but is a nice place that is a good combo of a bit hip, yet clean, and "safe" in terms of its ambience - so it's a great place to go with your parents for lunch or for a coffee when they're in town and you would like to show them how much of an adult you are. It was a bit confusing about where you order takeaway or table service and it's a bit busy so you may need to wait around for a table - but it's a very nice place, quite reasonable, and definitely recommended.

I would say it's a little overpriced, as the eggs on toast are $14 and with the bacon and avocado price boosted to $25 ( too much for that little dish). I would recommend to review either the prices of the sides or the quantity of them.

Ample seating, nice design and lovely staff lead to a decent Sydney cafe experience. Their coffees and meals are on the slightly pricey side, but nice enough to justify the cost. I had the rhubarb and quinoa porridge paired with their daily batch brew which went well together. They're also open partly on weekends, so pop in for a coffee if you're on that side of town.

Best coffee and customer service in all of Sydney! I ordered a macadamia nut milk latte and have never tasted anything better in my entire life. Ben was my cashier and is an absolutely lovely human being and great representation of Pablo & Rusty. After a walk around the block with my coffee, I decided to go back for the exact same order as I was truly impressed with the latte as well as overall experience. I even ordered a GF ham and cheese toastie and it was THE BEST GF BREAD I've ever had in my life!!!!! I will be a forever-customer! Only piece of advice would be a request for the owner/staff to dust the dangling light fixtures as they are covered in dust. Other than that, I love Pablo and Rusty's clean coffee and beautiful establishment!
Update: 18th of June 2019: they have changed the brand of the macadamia nut milk they used to use. It does not taste the same. I will cease buying coffee from here until the brand is back to one they originally used.
Update: 24th of June 2019: they have gone back to using the most delicious macadamia nut milk ever! Will continue to support local businesses!

Please do yourself a favor and order the Avo-Toast. It was the best Avo-toast we have ever had. We even ordered the gluten free bread and were so amazed by the quality of their food! We tried hard to make it back for breakfast here the next 3 days! I will definitely come back when in Sydney!

Went on a Saturday for brunch/lunch time and it was PACKED. The wait wasn't too long before we got a table. It was a really bustling atmosphere with nice decor, ambience. They have a vast coffee menu but they also have a different, more limited menu for Saturdays. The miso mushrooms wasn't the best look, however the taste combination was totally on point. One of my favourite cafe brunches! They also offer draught coffee on tap, what I like to call COFFEE BEER (relax, no alcohol in this, just nitrogen). The staff was nice even though there were too busy, especially the lady at the cashier, very nice to have a chat with.

There are two things on the menu most people don't know about this place.
The Nitro Coffee, which is a refreshing cold brew. It's rare in Sydney, and you can find it here. The place is cozy enough to drink this in Winter
The other one is a real surprise, it's the Decaf Flat White. Not sure how they do it, but it does not taste like Decaf at all.

I also like the fact that the portion are simply right: no too small but not so big letting you feel swallowing...

Just popped in for an Iced Chocolate and my sister had a Sticky Chai. Positive atmosphere and beautiful decoration. The Chai was served in the most amazing hipster teapot on a wooden board and the Iced Chocolate, though not as icy as I expected, was clearly freshly made and delicious. In a brand new cafe you expect there to be a few quirks to iron out before things take off, but I think these guys have perhaps stumbled on the best format for future cafes to emulate. They have a board of 4 different single origin coffees to choose from, and the suggestion is for each of these to be drink black.
While I go on a bit about this pace in the full review, let's just say that the atmosphere in here, the coffee and the service is such that I think I may have found my new favorite cafe in the Sydney CBD. Ended up having 3 coffees here on my first visit and all were delicious.
Certainly worth a try.

I came here on the recommendation of @thejugernauts and I wasn't disappointed.
A big glass window and door front opens the place up to the street and with the warm yellow light and wooden decor it makes you feel like you're sitting in your friends kitchen when you were 6.
I ordered my first iced slow drip coffee and for someone who drinks long blacks all the time I wasn't disappointed.
Did I mention these guys are open from 0630 - 1700 which I always like when food places are open longer than the business day in the CBD.
For the food I ordered the equivalent of the big breakfast (I'm always so hungry in the morning. Dry aged chorizo with salted cod brandade. It was amazing! Pretty pricey for what you get but well worth it.
I can say from the bottom of my belly I thoroughly enjoyed this place.

For the last 4 months has been my place to go for coffee and not disappointed, after Xmas break they had a big turn over of staff and since then table service is slow, coffee orders are not always right and the vibe is no longer the same. 這是我在澳洲雪梨打工度假那段時間,最喜歡的咖啡店之一,每次經過都是滿滿的人潮,他們的咖啡很好喝,其他的餐點也都有一定的水準,店內座位並不算多,常常都是人滿為患的狀態,裝潢很簡約看起來非常舒適,在離開雪梨前終於在店內好好的吃過一次餐點,很喜歡他們隨興且配色繽紛的擺盤,鮭魚也很好吃,其他餐點也有一定的水準。其中我最喜歡的是他們家的Chai latte,基本上就是充滿荳蔻、肉桂等印度香料的奶茶,可以做冰的也可以喝熱的,每次都讓人難以選擇,配上澳洲香濃的牛奶真的很讓人懷念。

シドニーのオーガニックコーヒー検索して行ってみました。片言の英語だったんですが、対応が親切で雰囲気が良かったです。2019年3月末に伺いました。豆を購入して帰ってきましたが、とても美味しくってなかなか日本では同じ豆にまだ出会えてないです。今度はシドニー行ったカフェで飲んでみたいです。
