Very enjoyable. The green tea starter was novel. As was the oyster in a foaming milky sauce. The mackerel was not the greatest, seemed a little dry and tough. That was the only setback and what followed was fabulous crispy chicken, fresh baked rolls and then a sublime foamed dessert. The suburban setting and plain decor does reduce the specialness of the dining experience against competitors, however the service is friendly and attentive and the food is good.

2 years after our last dinner here we returned for another wonderful dining experience.
There's not much you have to do here except secure a booking, and then put yourself in the hands of the chefs, as the only option now is the set course dining experience.
You can choose your own wine by the bottle or glass from their limited list, or add on the wine-pairing experience.
Once again, it was a wonderful experience of original and interesting dishes, and the service and food were excellent.
Despite the food being a set course, they have no problem coping with most dietary requirements, and the gluten-free selection was superb.
There's no menu on the website, as it changes often, but they do give you a list afterwards which I've attached as a guide.
Definitely not the place for a standard entree and main, but if you want to try new and exciting dishes, few in Canberra are doing it as well as Pilot.

I was really impressed with my dining experience at Pilot. The food was creative, adventurous and highly original. Each course was well thought out and sparkled with taste and high imagination. The Chef has really raised the bar for Canberra. The service was impeccable and staff were professional without being overly attentive. They had the balance of things well calibrated. I liked the fact that the decor was not trying too hard and seemed appropriate for a small suburban shopping Centre. I thought the whole experience was quietly sophisticated and recommend Pilot to those who are looking for something refreshingly different. Well done to the owners and the team. You are onto a winner!

Quality of the food and service exceptional, however, this experience is truly for the adventurous. The dishes are unique, so not all will be crowd pleasers. Pilot's style is to take well known classics and put their own spin on it. A very wonderful experience overall, but more meat dishes and comfier chairs would be better.
We decided to skip the matched wines in favour of Edgar's Inn next door for pre drinks - jug of Sangria for $30.
The waitress did try to explain the dishes, but unfortunately I was busy taking food pics. Here's what I remember:
Tea and soup served together:
1) Herbal tea served cold in sake cup. Mild flavour See pic for ingredient list.
2) Broad bean minestrone with sliced asparagus, nasturtium leaves and ?basil oil dots. A refreshing consommé with a balsamic tang.
Snacks served together. Encouraged to go ham & dig in. Towels provided to clean your hands afterwards.
3) Crispy smoked potato chips ( Tasted like bacon and vinegar.) French onion dip - super yum!
4) Mussel escabeche. Full of briny/ umami goodness. Sauce described as a tomato reduction.
5) Quail scotch egg. Egg perfectly cooked. The most memorable was the grated potato coating which was perfectly crispy on the outside. Topped with thick mayonnaise and caviar.
6) Flatbread: More like a bun which was slightly oily on the outside. Inside were butter, allium, sorrel and dill. Very filling and yummy. Think garlic bread or Chinese scallion pancakes.
Then 2 entrées, one after the other.
7) Spatzle. I had always imagined it would be like gnocchi. This version was crispy, kinda like cheddar Goldfish bikkies. Mixed with normal corn kernels and popped corn. There was some sort of white sauce ( foam/ emulsion) to go with it and a fine red powder which I couldn't taste. Strangely more-ish. Good but not wow.
8) Custard, celtuce and pork: Layered dish of silky smooth egg custard base. Middle layer of chili oil with Szechuan pepper. ( You know the Lao Gan Ma chilli oil jar with peanuts). Slivers of caramelised shallots added a chewy sweetness. Topped with roast pork, fresh cucumber slices, geometric leek shapes, and rounds of celtuce! Celtuce is not a cross between celery and lettuce. Those rounds I thought were picked cucumber was actually celtuce! A dish inspired by mapo tofu, definitely makes you go "Huh?". +++ Points for creativity.
Main + sides served next:
9) Quail breast: Very succulent! Tasted like dark meat of chicken. Served with cranberries and capers in a cranberry sauce, and a side of buttery and smooth celeriac purée. My favourite dish, because I was craving meat by this time.
10) Small golden potatoes covered with saffron oil, broccolini flowers. Neutral taste but pleasant. A filler for those who are hungry, I was pretty stuffed by this stage.
11) Zippy salad: Mostly cos lettuce in a light oil dressing. Bits of seaweed, dill, parsley etc. Caramelized sunflower seeds for crunch.

12) Dessert 1: Pine Lime. A mound covered with torched meringue and sprinkled with lime leaf powder. Underneath was fermented pineapple called tepache, as well as pineapple sorbet. Refreshing, cooling, sour. A large serve for "pre dessert."

13) Bananarama: Banana ice cream, topped with macadamia shavings. Submerged in the ice cream was a very delicious banana cake/short bread with crispyish elements.A very strong banana flavour came through, (possibly banana essence). Could also taste a light lacing of liquor ( macadamia and wattleseed). Macadamia nuts were also buried in there.
The bill came out with a sample of the herbal tea we had earlier. Complimentary Stroopwafel. ( Ice cream wafer cookies sandwiched with thin French buttercream and cinnamon.)

My partner and I headed to Pilot for a pre-Valentines day dinner. The menu was outstanding, service was outstanding and overall a wonderful experience. We regularly head to fine dining locations across Canberra and both agree that Pilot is our new favourite. It is a little bit of a different experience to other establishments, however we feel it is an exciting change from the norm. We will certainly be returning.

Last night's dinner was, without question, winner of the week....maybe even ever!
The food was creative, clever and, of course, sensationally delicious. The staff were so professional and knowledgeable, without being over the top. They worked like a machine, with seamless transitions between courses, while still being relaxed and engaging.
If you're in Canberra, do yourself a favour and visit @pilotrestaurant. I can't recommend it highly enough.

Been wanting to go here for ages. Struggling to find superlatives that describe this amazing place. Food was beyond amazing. Flavoursome as well as looked sensational. something like I've never experienced before it was truly amazing.
Ross and the team have created a truly unique experience in Canberra. The staff were attentive and helpful and extremely pleasant even with a “AY” thrown in there for good measure.
Be warned- it’s a set menu but WHAT A MENU. And if you’re not into slightly different in your food, then might not be for you. They change some of the dishes 6/8 weekly and don’t have a menu on their website for this reason. This could be the best dining experience in Canberra and it is an experience. GO… with open mind!!

The staff were so knowledgeable and passionate which is appreciated at this price point and the location was fantastic and easy to find a parking spot which adds to the ease. Definitely a place that I would visit again. 10/10. If you’re in Canberra either for a visit or this is your home and you haven’t been, you should make the trip to Ainslie.

There is so much to like about Pilot, it may take an essay! To begin with, the food degustation is amazing: a range of interesting & experimental dishes that are each special. Subtle flavours everywhere! The wine pairing is perfect and brave: our som wanted us to taste a range of wines that we may not usually try! With vegetarian, most restaurants default to mushroom - you get tired of mushroom risotto and “steaks”. This will be a go-to when in Canberra!

Hands down the best fine dining in Canberra. We also enjoyed the takeaway menu they had during 1st and 2nd lockdown. Usually we try different fine dining places but this is the only place where we have been more than 4 times and already looking for another excuse to visit them again. The food is delicious,

Food: totally delicious from start to finish. We had the tasting menu. The plating was beautiful.
Staff: most attentive staff that I have experienced in Canberra!! The details, service and attentiveness is in par with three hatted Australian restaurants.
Price: Worth to try the tasting menu. I think it was $90/person

First time at Pilot. Thrilled to get a last minute table and worth the drive from Sydney! I already felt positive about the night out as I made the booking over the phone with Ross who was so friendly and engaging and set a high bar!! The other staff, co owner Dash, waiters Joel and Ash were equally as friendly, professional and engaging. The food and wine did not disappoint. The highlight for us was the chook and the zippy salad! Though the deserts were sensational, with Pilot’s take on Turamisu, called Cocomisu and a vienetta! We could not fault anything! My partner and I have been to Pilot the last two times we visited Canberra and they are two of the best meals we have both ever had. We have both travelled extensively and eaten at a myriad of incredible places and Pilot is easily one of the best experiences we have ever had. From the incredible, unique and innovative food to the friendly service. The food is fine dining but the service is friendly and welcoming without a touch of snootiness. Bonus was the AMAZING non-alcholic pairing option which complimented each dish perfectly and was an absolute delight. We can't wait to come back again.

The soup was one of my favourites as well as the chicken.

The fixed-price degustation menu offered a beautiful selection of crafted dishes. Service was attentive and engaging making for a wonderful experience.

During lockdown we got takeaway and unfortunately they forgot to put the dessert in the bag with the rest of the food. Was a but bummed out as we live 20 minutes away. Someone from the restaurant actually came out to our house in Belconnen and dropped it off for us.

I picked this place because I read the chef had worked at 2 of my favourite Sydney fine diners: regretted Oscillate Wildly, and beloved Ester.
I wasn't disappointed. Every single dish had this typically mod-Oz spark, where East meets West, and where sophistication and ease surprisingly but happily coexist.
The service was as equally balanced: attentive and professional, yet friendly and relaxed.
The icing on the cake (literally) were the desserts: while they are, in my opinion, a bit of a let down in many Australian fine-diners, at Pilot they were as good as the savoury courses.
Some of my favourite courses include the deboned, kimchi fried rice filled chicken wing snack and the massaman curry carrots & oxtail.
My husband thoroughly enjoyed his wine pairing, with each wine beautifully matching each dish.
Nice addition: the background music was awesome: we started with Silverchair, and ended on Nirvana - how cool!

Confession time: Pilot has been open for over a year, is really close to where we live, and we’ve only just visited. Big mistake! It’s very, very good. Our loss.
I guess I was put off by some of Pilot’s sm posts, which made their food seem overly complex — twee, even — accompanied by descriptions of the various dishes that seemed banal. I was wrong.
Pilot serves wonderfully complex and creative food, which you can accompany with some quite unique wines — indeed, Pilot has a wine list I crave to explore more.
Service is attentive and knowledgeable — can’t ask for more.
Will I return? Will I what! Can’t wait to return — sensational. Highly recommended!!!

Wow, what a treat it was to dine at this fine establishment. My husband and I had the degustation, my husband had the pairing alcoholic drinks, and I had the pairing non-alcoholic drinks (which is awesome as you don’t usually see this option, and being pregnant, I felt I could fully enjoy the experience without ‘missing out’). The food was sensational, and really highlighted the skills and thought put into the menu and the produce, and it was great watching the kitchen staff working as a team. Amazing degustation that changes weekly. As I don't drink, I was surprised that Pilot offers non alcoholic drink pairing, the first time I've been offered this at a degustation. I found out that most of the drinks were made by a local to go with the menu each week. Service was top notch and the food was delicious, even if parsley oil with icecream and blueberries was an unusual dessert choice.

There's a wine list for everyone, new world Australian local wines, old world style and experimental, the beer list even deserves a shout out whilst small is thought through. The staff are all friendly, knowledgeable and passionate about food and drinks.
We dined with vego friends who said they'd never had such a well put together degustation (they've complained previously that vegetarian options often feel like a side thought but not here) the chef's at Pilot truly love food and it shows. The non-alcoholic pairing is genius and highly recommended.

Very interesting tastes, detailed explanations of dished from staff but somewhat more than my short-term memory could accommodate. Many of the fixed menu dishes absolutely delicious, leaving one wishing the small portions were slightly larger. Would certainly go again. Cuisine is modern and adventurous. We had the degustation. Some dishes were excellent, some were so-so. One was so spicy I couldn't eat it which shouldn't happen in a set menu. My wife and I had dinner here for the first time on Wednesday last week. It was absolutely amazing! If you haven’t been, you need to!
We had a number of items and we loved every single one, but our favourite was the roast chook that you eat as a sandwich! The home made sour dough bread with dip was also a huge winner.
We have diner at many of Canberra’s best restaurants and this is right up there, seriously it is a must try!

Had been here before and was impressed, but this time was absolutely subpar. Service was disappointing - it took 20 minutes for our waitress to take our order, and another hour until we had received our entree. The flavours were not that stand out, and not to the standard that we were expecting from this highly raved restaurant. Our first bottle of wine was nice, but the second was clearly rancid and the waitress was unreluctant to address the issue when i asked if we could have a different bottle as I thought it was off. Thankfully we were able to select a different wine, but what is the point of us trying the wine in the first place if we aren't able to decline the wine?
Th serving time was slow, I almost had to shout to get attention to order. They had run out of their duck and bug dishes, which disappointed us as we had planned to order those dishes. Serving time was slow (we had been there 2 hours by the time our mains were served). And the most disappointing aspect was that the servers have no knowledge of the meals and not able to answer questions about meal size and how many dishes we should order.
Not worth the price they charge. Given they are an offshoot of 86, I am disappointed and would choose 86 over them in a heartbeat.

Really good, original food. We both had the degustation (they name Prix Fixe) and each dish was unique and delicious. They also did a completely separate vegan degustation for my partner which she loved. I can vouch for it too because I tried many of the dishes and would have happily eaten what she was having. Staff were appropriately attentive and knowledgeable. Paired drinks worked really well with the food and was enough booze for me. Left feeling sufficiently sozzled although did have a glass of champagne before we started the meal. All around a great night. Thanks Pilot. The roast chicken dish was quite plain and some of the chicken wing was still raw.
The idea is there but the final result doesn't meet the expectations for this level of restaurant.
Service was attentive but we were unable to hear the descriptions of the dishes due to the ambient noise.
Some form of sound suppression on the ceiling might alleviate this distraction.
Surprised to see no Canberra beers in the wine list, given that there are two award winning brewers locally.

For example the white bait cracker entree is slightly salty with the freshness of the white bait, wrapped around with creaminess and surrounded by the soft crunch of the cracker. The house made vienetta has a savoury creamy meringue with a flame burnt top. Underneath all this is a salted caramel ice-cream style layer that is rounded off by coulture dark chocolate that takes the edge off the sweetness. Each layer is divine on its own. Eat them together and you have this 3D - multi dimensional sensation of heavenliness.
