Unexpectedly impressed by this restaurant - was not disappointed by a single dish.
The proteins in particular were excellent. The quail and lamb were some of the best I've had.

The food and service was immaculate. We experienced the 8 (or 9) course banquet that was faultless. It was impossible to pick a favourite dish and the accompanying cocktails were exquisite. Our wait staff were friendly, efficient and very affable. Our food arrived quickly each time but with sufficient rest periods in between. Definitely one of the best restaurants in Tasmania. I had a fantastic dinner experience here about a month ago. I went with the "feed me" option - you'll get about nine or ten dishes in total (including desserts). Great food and awesome service. The industrial decor looks great too. I would definitely come back for more. Highly recommended.

Another highly praised restaurant which we checked out in Tasmania was Franklin restaurant in Hobart. We had booked for a late meal at the end of a busy day seeing the sights. The restaurants has large glass windows which are very visible from the street. The restaurant interior is paired back with concrete and industrial fittings, providing clean visual features. The open kitchen and bar provide the ability to watch what is going on. It is a busy restaurant but the staff are attentive. The ambience is buzzing and this makes for a great dining atmosphere.
The drinks list includes craft beer, interesting wine options, including natural wine and there's also a mix of cocktails and craft spirits.
The menu has a number of inviting options and was headed up with some exciting small bites. A must eat item is the scotch quail eggs. This tasty morsel has a crisp outer crust, a tasty mid layer of sobrasada and the yolk of the quail egg oozing out once cut into. The octopus and salt bush dumplings may not be the most appealing looking bite, however this was made up for by the texture and flavour. We were also provided some amazing complimentary bread.
The mushroom dish was full of umami from the braised wakame and egg yolk sabayan. This was the tasiest dish of the evening. With the oyster mushrooms providing a meaty texture.
Potatoes are certainly abundant in Hobart and were well put to use in the potato galette with an emulsion of huacatay, a Peruvian herb sourced locally on the tasman coast. This accompanied the main source of protein we ordered, the woodroasted littlewood lamb, served with braised almonds and pickled kohlrabi. This dish was very simple looking on the plate, however the flavour of the lamb was incredible and the almonds provided texture and the pickled kohlrabi cut through the richness of the lamb.
Franklin is great place to enjoy a meal in Tasmania to savour some local produce and wash ot down with a quality drinks list.

What an awesome experience. A warm welcome set the tone right for the evening. Then a delicious twist on the martini got us settled. The menu is a bit different and uses some great local produce including abalone! We started with some in house bread and then had a scotch quail egg (with gooey centre), abalone skewers and some salami with (I think) Russian mustard.
Then we had probably the most perfect dish I've had for a while. Wood smoked octopus served with wild herbs and currants. The octopus was perfectly cooked with a crunchy texture (cooked without being rubbery like it usually gets served) and the smoking was delicate and slowly built on the palate without ever getting overwhelming. We would go back for this dish alone!
We then finished up mains with a delicately cooked lamb belly in whey brine which came with a mix of natural flowers and leaves ranging from a parsley type flavour to aniseed.
This restaurant is in Hobart CBD so there's really no excuse not to visit this spot for an amazing culinary experience with excellent backup from the staff on the floor.

Franklin is situated in this large warehouse type building within the Hobart CBD. The high ceilings and the overall space of the place makes it very spacious. We ordered a number of dishes rather than going with the 9 courses "feed me" selection because we were not that hungry. Some dishes like the chicken liver and raw morwong are a hit but some others are a miss like the asparagus and the beef. They are lacking flavour for the price we are paying.

Hobart has a lot of beautifully preserved architecture, and the heritage-listed, Argyle Street art deco exterior of Franklin Hobart is no exception. Prior to housing the Mercury newspaper’s printing press, the minimalist restaurant space was once a 1930s car dealership called City Motors. Today you’ll find it sleek, dark and angular, dominated in the light-filled front room by an austere polished concrete and metal bar.
In the darkened rear, it has been softened with painted paling faux-walls, fifties-inspired furniture, and gauzy drapes that try to create some cosy lounge-room type nooks inside the industrial space. In the large open kitchen, centred around a wood-fire Scotch oven, you’ll find Analiese Gregory. You might recall Gregory’s cooking from her last Sydney venue, Bar Brosé, before she relocated to this island state. At Franklin her emphasis is showcasing Tasmanian produce, starting with Blackman Bay Pacific Oysters ($5/each) enhanced with a bright green dribble of elderflower vinegar.
Opening bites are best consumed with your fingers; starting with wafer-thin yeast crisps stuffed with generous, fat pink squiggles of rich, Chicken Liver Parfait ($4). Crisp Octopus Head and Saltbush Dumplings ($4/each) are tasty, especially when dragged through a golden sauce that evokes preserved lemons. The only disappointment is a too-oily, set Scotch Quail Egg ($5) encased in sobrasada, a spreadable Spanish sausage.
Gregory’s emphasis on local produce continues into our shared dishes with Bruny Island Wallaby ($20) served raw and delicate against a slight rumble of coffee brown butter offset by pickled pear. Eat it with a fork, or scoop it up with the edible blooms onto the accompanying buckwheat crisps, if you prefer.
For our drinking journey, we left ourselves in the hands of Manager Forbes Appleby, whose list leans towards pricy. He kicked us off with a co-branded drop from local star winemaker, Peter Dredge, the 2017 Dr. Franklin-Stein Pinot Noir. I don’t know if it did dishes like the Wood Roasted Octopus ($24) any favours. Regardless it was a pretty dish with a nice smoky undercurrent brightened up by sweet and sour currants.
With most of the list leaning towards natural, we gave our palates a break by ordering the four listed sakes. While quite slow to arrive, the four sakes all imported by Blackmarket, were bested by the pure intentions and natural rice characters of the Mutemuka Shuzo ‘Mutemuka’ ($15) from Koshi in Japan's Kumamoto Prefecture. It went particularly well against the Tunnel Hill Oyster Mushrooms ($16) served with braised mekabu and egg yolk sabayon. The buttery seaweed mushroom combination was insanely good; well I think it was - I would have needed a second mouthful to really be sure. And therein lies the sticking point for me, refined as we tried to share four-ways a well-executed triangle of Wood Roasted King Edward Potato Galette ($20): the portions at Franklin are too small.
Combining four people with very small portions, left everyone wanting for more of each dish. Well, except for the Littlewood Lamb ($40), which, while still small, was dominated by unrendered fat and required too much sawing for my liking. With the benefit of hindsight, I’d opt for the ‘Feed Me’ ($85/head) option initially suggested by staff without any explanation that tackling the menu otherwise might lead to disappointment.
They redeem themselves by encouraging us to order the Crispy Potato ($16) dessert in duplicate. With lashings of salted caramel and a fluffy brown butter mousse, it’s a bit of a Gregory signature, travelling with her from Sydney, though here I hoped to taste more of the top-quality Tasmanian spuds.

An exceptional experience. The space is industrial-chic meets upscale residence. The menu is heavily based around the huge woodfire oven. Lamb ribs with a crispy fat to die for, a baked bread with lamb mine, yoghurt and mint, and a stunning burnt meringue with sheep's milk sorbet were the standout dishes. Friendly and chatty (yet totally professional) staff completed a wonderful evening.

Had a birthday dinner here at Franklin. I firmly believe that whenever you consume food, it should be as much about the experience as it is about the food. And it is the dining experience that sets Franklin apart. When I describe the cafe and food culture of Hobart to mainlanders it is Franklin that I am describing. I love the vibe and the friendly way that the staff engage with diners. This should be top of your list if you are visiting Hobart, or you live here now, like me.

My daughter and I were ‘walk ins’ and a little too early for dinner yet we were welcomed at the bar where we enjoyed a few luscious cocktails and delicious small platters of pre dinner appetisers. First time we've ever been here. We were well greeted n ushered to our table. We chose to sit inside with the comfort of cool temperatures. The restaurant wasn't crowded n we had most of the inner to ourselves. We went for a 3 course meal n it was the best meal i have ever tasted. The tomato cold soup was utmost delicious with it's natural flavour n beautiful smell of herbs n spices. Was very impressive. Cooked to our perfection n liking. Flavours were subtle n tenderly placed on the plates. Meat was cooked beautifully n so was the fish. Then our souffle appeared with its puffiness n Beautiful taste of passionfruit n coconut. Was yummy. We also got a surprise plate with our anniversary greeting sweet token..... Loved it. The waiters were tremendous n gave us all the attention we needed. Absolutely! Highly recommended

Fantastic experience. We just dropped by. Ended up staying 2.5 hrs for early dinner. Squid was YUM. The cappacio was delicious too. Wine selection was OK, but not that extensive. International feel restaurant in the heart of Hobart. I booked this for my partners birthday and overall had a really great experience. The service was awesome, our waitress was really sweet and attentive. The reason why we chose to visit Franklin was because the reviews on the food where hyped. It definitely has some incredible dishes, the pate and the lamb belly really impressed us. The other dishes seemed to roll into one. A large portion of the menu are wet dishes and vegetarian with a formaula of a raw vegetable, herbed sauce and crunchy garnish. Felt a bit repetitive. 4 stars because they really are exceptional, but unlike other restaurants for us in Hobart we wouldn’t be rushing back.

Came highly recommended but did disappoint. Wine list has great selections and I see where they're heading with it but unfortunately so few Australian wines, why when you can get french style reds now? Menu was a challenge to construct a meal but we thought we got it right until half way through. Fritters, lovely, cod and hot sauce, dish of the night, clams not far behind and that's where things went down. Gnudi was almost the same in terms in sauce and garnish. The veal was undercooked for the cut (I love rare beef but when the cut has so much sinew, it just needs to be cooked out). To the waitstaff that was clearly complaining about no tip to a colleague when you forgot our jackets, I'm sorry but the whole team gets the tip if it all comes together. The service was professional not standout.

Chose "feed me" (chefs choice) which was 8 or 9 shared dishes between the two of us. Think of degustation, but there was a lot of food. I'm piscaterian, forgot to say when booked, wouldn't have blamed them if this was hard on short notice, but it wasn't. Food was phenomenal. Wine was phenomena - some really good choices of you enjoy natural wines, but I saw some more classic options on the wine list too. Service was phenomenal: staff were amazing, friendly and helpful. It's not a cheap meal, but it's very fairly priced for outstanding food. All local produce, incredible environment, amazing wine, friendly and welcoming staff. This was the most amazing dinner I've had in a while, it was truly a joy.

Lovely restaurant, great service, and they are legitimately trying for interesting food here. Not everything works though, and you have to know going in that this is basically a degustation menu no matter what. Portions are often laughably small, so you're looking at ordering up a storm. Once you do, prices aren't too bad, and sometimes the dishes are a real winner, but sometimes they are also mediocre. Also, never seen a smaller portion of sake in my life, served as if it's a shot of spirit, rather than a wine.

We ate during the early seating and the service was a little lack lustre. We had to ask when when one of our dishes was going to be served (an hour and half after our booking time), this was 15 minutes after our waitress asked if would like anything else whilst clearing the table. This restaurant was fantastic, loved the minimalist aesthetic, and sitting at the bar around the kitchen watching the chefs do their thing was a great experience.
The service was helpful and impeccably timed throughout our dinner, the staff were observant and very pleasant.
The food sealed the deal for us though, the raw kingfish to start was incredible, followed up by raw grim cape beef, a whole flathead and the most decadent serving of pork belly I've ever had.
This is an absolute gem in the middle of Hobart which can easily compete with the best that Melbourne has to offer.

We ordered a number of smaller tapas style dishes at Franklin bar. The food was very good, however, we showed up without a reservation and were only offered bar seats despite there being more tables. We felt a little bit like we were forgotten about in the bar corner. Otherwise, their food was good, pricey but good.

Calamari was excellent but the octopus was very salty. Crispy potato and brown butter was extremely rich. It was basically a slab of butter between two wafer thin potato "galettes". The service as ANNOYING. Waiter told me TWICE i had to vacate the seat by 8.30pm - the last time he told me this was at 7.10pm and i was already onto my dessert. I felt rushed throughout the dinner by the waiter. However the kitchen staff at the bar were extremely friendly and had great recommendations.

Disappointed to see that the “wood roasted lamb rack” we ordered didn’t even see the beautiful big wood fire oven they operate here. We dined at the bar and I watched the chef cook it the entire time in the combi oven. And to make things worse he cut the ends off along with the bones and threw them in the bin before plating! These are the best bits! When you’re charging $40+ for a dish it should be done better. Staff were also a little pretentious and didn’t seem to have time explain the dishes they were serving before rushing off back to the bar for a chat. On a positive note, great snacks were saltbush and calamari fritter and the chicken liver parfait. Won’t rush back.

This review need to be written as some of the others are, in my opinion, incorrect.
This is a brilliant place. The fitout is industrial and sophisticated whilst remaining inviting and warm, with a fire and timber breaking up the concrete and steel.
The food is stunning. With a strong local focus, from the "Australian negroni" made from local distilleries (amazing, one of the best negronis I've had), to the intelligent and creative menu.
The kitchen is a spectacle in itself. This is a smooth, professional operation, each chef seemingly in tune with each other with perfect timing and no stress or yelling to be seen; we enjoyed watching the care and attention that each element of every dish being prepared was given.
Highlight dishes were the bone marrow rice, and lamb neck. Yum. Sublime!
The service was a-grade. Friendly, knowledgeable, attentive when required and unobtrusive when required.
Wish I was a local so I could come again sooner than I'll be able to!
