Amazing ambiance. Reminded me of this beautiful old colonial theatre I used to go to as a kid.
The food was scrumptious, large portions which you can share. Perfectly cooked.
All this with great jazz that adds to the theatre of this place.

Tucked away Hubert is worth the hype and a standout in the Sydney dining scene. The ambience is moody, jazzy, romantic and fun and the food compliments ever so well. The Chicken Fricassee is a must if dining with a group - the chicken is so flavourful, wonderfully moist and overall just divine and delicious.

Dim, fun,chill and jazzy vibe accompanied by French cuisine with an Asian twist. Definitely NOT a classic French restaurant.
Feels a little too hyped, particularly the food and cocktails. The wine selection is decent and has a good variety of French wines. Hubert does however has a nice fun, jazzy and "Frankie Pizza" vibe (restaurant version). There was live music when I was there, which was really nice.
Overall I felt the food was missing a final French boot in the buttocks. Feels like Hubert just missed the mark on well balanced dishes.
The OX escargot was overpowered by the OX sauce so much so that it tasted like seafood (might as well get seafood??)
There was no french onion soup which I was looking forward to however the Kimchi gratin tasted like French onion soup with Kimchi in a gratin form.
Taretare was not bad, though it shouldn't need so much potato crisps to shine as a dish. I would have preferred more concentration on getting the taretare well balanced.
Steak was nice though I would have loved a little bit of French style gravy.
The fries was sadly coated in a seaweed seasoning, that was dry to the mouth and actually a little sweet. I personally would have preferred regular salt potentially with some simple herbs/spices.
Service is a bit above average and note the food is designed to be shared (not very French) so it better to come with more people like about 4-6 if you want to try more mains.
Make sure to book a month in advanced due to popularity.

Absolutely in love with the vibe and food here. We were lucky enough to get a last minute booking even though it’s a bar seat. Must try Escargots XO, Duck Parfait, Bavette. There was also live music, which made my night perfect.

The place had a great ambience. We didn't have a reservation and we got seated at the bar but was allowed to get the full dinner menu. The bartender and the servers were really knowledgeable about what they were selling.
The place is just amazing. Live band was a bonus. It was a lovely night with lovely food and great people.
We started with the Fish boat with 3 different raw stuff- caviar, trout roe and sea urchin on an edible base which was super delicious.
Followed by the escargot which is the only place we found this here in Sydney, so far.
Got the steak and added foie gras. - a bit dry on the foie gras but I can understand as it is very difficult to get this here.
and dessert was huge, too!

One of the premier dining experiences I've had in Sydney. A relaxed but refined setting with live jazz and a myriad of interesting posters and bottles give you a setting perfect for the food.
The food balances out well with a mix of traditional French style with just something that enhances. Soufle and gnocchi among the best appetisers. Steak was soft and flavourful, fish bright and cooked to a nice texture and the burger an experience among the best. Desserts balanced the sweet and mellow flavours needed to finish the night.
Service impeccable and waiters with the knowledge of everything at hand. Highly recommended for that special night you can spend the money.

Heard lots of great reviews and Hubert has been recommended to me on numerous occasions as a must-try restaurant. The food was flavoursome, service was attentive and friendly. Highlight was the Escargot XO. Booking is essential and make sure it's you do so months in advance as it tends to get booked out. Recommended.
Definitely would have given a five star rating for the establishment however I've taken one point off as there was some confusion over an incident raised subsequently and it could have been handled better by the restaurant manager.

We went the petit banquet for 6 but thought it necessary to also add the 1kg rib eye. The service was impeccable. The team swarmed us with mains and we're there right when we needed them throughout the night.
It was such a great experience, from the mini alcohol collection on the way last the stairs, to the feeling that you.jist slipped back into the prohibition era, seeing the piano up on the stage, or knowing the drinks list has collaborated with Baxter inn, all makes me want to come back again and again to try the rest of the menu/drinks list.

It's an odd place. Seemingly buried deep underground, the decor transports you back to the 1970's, with quaint signage and bottles populating high shelving. The place is popular, and it's owing to the mix of quaint, bustle and predictability. The menu is simple, the food well prepared, and professionally delivered. The duck beast is outstanding (I never quite get the appeal of the signature fricassee chicken). And did I mention they have a theatre? Julia Stone and her band were outstanding!

Completely overpriced and one staff member was very rude. Seems quite authentic compared to bistros I visited in Paris but not worth the price. Drinks list is comprehensive. Very dark and on this occassion (and probably regularly) had a live band playing gentle jazz. Definitely worth a visit to the bar downstairs or dining if someone else is paying!

First off: Booking is required!
We were lucky to have been given the table close to the reception.
Second, if you dine at the bar area, you can’t have the main dining menu.
Food was exceptional! Ordered steak frites with a side of foie gras and enjoyed the live music!
Lastly, if you want to listen to live music, call in advance to know when the band will take breaks. Our meal got served right when the band took a 30-minute break.

The restaurant has an amazing vibe, the moment you step down the stairs you ll hear live jazz music. Staff are super friendly and accommodating. Absolutely a perfect French restaurant located in CBD of Sydney. When you push the wooden door from the crowde street and follow the stairs to the basement, it is like walking into the time tunnel, gradually moving away from modern times.

The menu offers a wide variety of delicious and mouthwatering starters and main courses. Everything we ate was fresh and delicious! The restaurant also offers a wonderful drink menu. The menu is pricey but surely worth sampling.
From the cozy lighting and the elegant decór to the amazing musicians. The atmosphere in Hubert is really special.
In contrast, however, the service was a bit slow. But we were happy to wait while enjoying the live music.

I just fell in love with the ambience and such an awesome collection of miniatures for your two flight of stairs down to the restaurant. The food was great, though the portions can be better. I’ll recommend this as an experience rather than a regular lunch or dinner. Live music on Friday lunch was pleasant. Put on your tuxedos and gowns, and head to this one for your next special date.

I had dinner as a walk ins in this nice French restaurant in the center. The place is exquisite even if full. Gorgeous elevated cellar and attentive and kind staff. Even the seats at the bar counter are comfortable and not at all in the background compared to the low seats. Jordan was superb and spent a lot of time, albeit very busy, preparing cocktails. Classic menu (soufflé, tartare, escargot, caviar, Chateaubriand) excellent, perhaps the dessert menu a bit limited. I'll be back.

The new chef is cooking more classic French food and it’s good. Tarte tartin of root veg is delicious. Snails are still delicious. Beef is delicious. Soon all the avant-guard signature dishes will be gone, some are not working now, lost in translation. I can’t wait for Alexis Besseau to find his rhythm as this joint is critical on the Sydney dining landscape

Hubert did not disappoint. Everything was impeccably presented and tasted divine! Came back for my birthday as last time we were seated in the bar section with a limited menu. Service was excellent with drinks being provided promptly, more bread served to allow us to enjoy the duck parfait and dip into the xo sauce with the escargot (probably not the usual thing to do but it just seemed wasteful not to!) And plates removed in a timely manner. The beef tartare and yellowfin tuna tartare was exquisite. So fresh and light. Then came the 1kg wagyu T-bone - cooked and flavoured to perfection - went well with the salad and roasted garlic. We did not manage to finish it but it was worth taking home and devouring the next day! 🤤 last but not least the madeleines.. a new favourite of mine such that I've gone home to learn how to make these beauties! Thank you for such a lovely dinner experience. Will sure to be back!

Wow! From the moment I walked into this very unique restaurant, I was blown away. The food was amazing, service impeccable (a shout out to Jordan who was our Server). Yes it's a bit on the expensive side, but so worth it. Highly recommend the clams, Murray Cod and duck a l'orange, and gateau chiffon washed down with a fine bottle of Margaux. Thank you Restaurant Hubert for a very memorable dining experience. We'll be back.

Ambient vibe in the restaurant. Highly recommended place if you are going for a romantic date, but very less personal space as the tables are quite compacted and it also gets crazy busy. Also music may not let you hear each other properly. Food were also bit pricey compared to quantity of food they serve. Some of the staff were quite excellent but some were bit rude. They have a wide range of collections of good wine but they are highly priced in compare to other restaurants. I would recommend for a one time visit for an experience but not for regular visit.

It is very hard to book a table at this place. You would have to book 2-3 months in advance. But I can see why it’s in high demand. The food is fantastic! I highly suggest getting the banquet as it means your group can try a little bit of everything. The beef tartare and the duck parfait is great!

I loved the atmosphere, waiters were very attentive and lovely despite it being busy on Christmas Eve and the entrees and appetisers were delicious! A shame we weren’t super impressed with their mains; we felt it fell flat and boring in comparison to their entrees. Next time we come here, we won’t be ordering their mains.

Lovely staff, very beautiful and entertaining live jazz band, professional and efficient service, and great food! My partner and I had a great time! We ordered the seafood platter ("Fruits of the ocean"), beef tartare, and field mushroom confit as entrees. There were all really delicious! But the presentation wasn't that great? For mains, we ordered the 500g rib eye steak. The staff suggested to get medium as it was difficult for them to cook medium raw apparently? It was pretty dry on the outside but the inside was tender. Overall, my favourite part was the live jazz music and the fresh seafood platter entree!

One of the best dining experiences that I have ever had. Outstanding food wine and service. The staff were extremely helpful with recommendations and were very warm and welcoming.
I went for a date night with my partner. To start we had the steak tartare and gnocchi. Both amazing but the tartare was the standout, the best tartare I have had, it was moreish and packed full of flavor. My partner who wouldn’t usually eat tartare tried it and loved it and kept going back for more.
For main course we ordered the 1kg Rib Eye to share, it was cooked to perfection with a side of confit garlic, hands down one of the best steaks I have ever had. A steak that needs no sauce is probably the highest compliment you can give. We also had sides of greens, fries, cabbage blue cheese gratin and pommes Anna. (We came hungry so we could try as much as possible) All of the sides went down a treat but the greens for me were a favorite as they had this zingy buttery flavor that complimented the steak perfectly.
Afterwards we went to the bar and had some more wine, I usually am not a dessert person as I don’t have much of a sweet tooth but I really wanted to try the Madelines and am so glad that I did. They were freshly baked and filled with a lemon lime curd, super light and flavorful and the perfect way to end a perfect meal.
We specifically came hungry and with high expectation. I have been dying to try Hubert for some time now and to say that I was blown away is an understatement. Still dreaming about the food today. I look forward to my next visit.

This is a place you need to visit at least once in your life. The vibe here is super classy and definitely high end, even for the bar for Happy Hour like we did.
Huge variety of drinks and a good selection of food. The food menu at the bar could be a little bigger, but I guess that's what the restaurant side is for. The standout from the menu? Well that's definitely the Normandy Burger at only $13 during Happy Hour and for $4 for the silkiest and smoothest French fries you'll ever have.
The Burger itself is a Dry Age Beef perfection. You get hit with the Umami flavour and pungent beef, that coats your entire mouth with pure beef fat goodness. Topped with onions, cheese, in house sauce and pickles between a dark and fluffy brioche bun, it's a piece of heaven between buns.
Well worth a visit just for this.

This place is v special to me. I came across it by accident on a business trip a couple days before covid became real. Revisited a few days ago.
Pommes Anna delicious. Fish was okay. We liked the steamed greens. Souffle is forgettable.
After 6.30pm jazz music starts.
Last visit it was super cold from airconditioning and the guy guiding us to our seat told my mum she should put her jacket away because it's warm here. Then kind of insisted on it for some reason, maybe so she would look better? If my mum wants to wear her jacket because it's freezing, she will. Lay off.
I get the sense that there is a high staff turnover at the bar. I've seen people get trained and leave after a few hours seemingly without pay. This is illegal. I'd be curious to know if they pay their staff properly here.

Hands down my favourite restaurant in Sydney! We normally walk in and sit at the bar as it has all the dishes we love from the restaurant. We always order the duck parfait, beef tartare and steak frites. The whiskey apple is also a great drink!

What an absolutely stunning venue that utterly captures the old French vibe. I have been here a couple of time for the bar section and it was great. Came this week for the restaurant dining with a friend and it was packed on a Tuesday! There were no tables but they managed to seat us near the back next to the kitchen but it still remained a lovely spot. The ambience is just perfect and the decorations are so wonderful.
The food, what can I say! It's wonderful and very quickly served which was extremely impressive. I highly recommend the steak tartar and the escargot. The food was decadent and delicious. 10/10 Hubert's. I had very high expectations and you met all of them. I'll return with more friends!

If you look for the top restaurant in Sydney, Hubert is unavoidable, it is written about everywhere, so we had to check it out. We went on a Friday night around 9:30pm; it was packed, loud, bustling, and had a great supper club energy.
We only had to wait maybe 45 minutes for a group of 4, which seemed just fine considering we had no reservations. A classic revival style establishment with NY style classic cocktails, all stellar.
The food experience was everything I expected, every dish a joy, and prices were actually quite decent for 3 Chef's Hats. The star of the night was the blood pudding, which we could have ordered a hundred of. The uni and roe bread was excellent, I got 3 of them, the salads were huge and fresh, the steak tartare was to die for, I really have no complaints.
The sommelier was also excellent, and talked us away from a more expensive sparkling to something a bit more esoteric and also cheaper; we all loved it and appreciated his honesty.
Hubert is professional, fun, loud, and made for groups. Highly recommended.

This place is not cheap, but you absolutely get what you pay for - the food and drinks are probably some of the best you will get in Sydney, and the service is just that right amount of familiar and professional. I’ve heard SO many good things about Hubert and I can say all my expectations were beyond met!! Hubert is hands down one of the best dining experiences I've had in Sydney. We reserved seats at the bar which still allowed you to soak up the jazzy vibe of the whole restaurant. With a band playing in the background and drinks flowing, it's hard not to have a good time.
Everything on the menu is very well priced, especially for the quality you receive. Ordered up a few dishes I've been keen to try for a while and was not left disappointed. Standouts were easily the Bavette Steak and the Gnocchi Parisienne. Steak was perfectly cooked and super soft with the Diane butter adding an extra touch of richness!

Fantastic intimate restaurant, feels like you enter into a completely different world as you venture down the stairs off street level.
Consistently packed, recommend trying to go on a quiet weeknight earlier in the week if less than 4 people as cant book beforehand.
We got lucky going on a Monday night and were seated at the bar area on the restaurant side - exactly same menu and comfortable enough.
Friendly attentive staff got us started with drinks, took a bit to get it delivered but definitely knowledgeable and takes the time to hear what you are after to make good suggestions.
Good selection of food on the menu, we ordered the Petite Barque as entrees, absolutely delicious and fresh - flavour bursts in your mouth and was the highlight of all the dishes. For mains, we got the Bavette steak and some fried potato sides with a good thick delicious sauce. Steak was well cooked but would suggest medium cooked, as our medium rare choice was a bit chewy. For dessert we had the banana tart which was nice and light, with an impressive thin base.
All in all a great night out, thoroughly enjoyed the food, wine and atmosphere, will come again.

Absolutely loved the vibe and setup of this restaurant. This is top shelf French cusine with a causal yet totally professional approach with its service delivery. The restaurant it self oozes that vintage charm and unique characteristics such as the theatre, live performace stage and wine bar. The menu is a curated selection of dishes which perfectly marries the precision of the French cooking techniques to the quality of the Australian produce. We loved everything from the duck parfait (with fresh Hubert baguette), poisson cru du jour (with yellow fin tune), mushroom au pouvre (must try), bavette steak, choux noir frise (just to balance out the meal with some greens) to vacherin (delicious meringue). We had the a la carte option today but they also have banquet option (minimum of 4 people) as well as events such as theatre nights (buffet style) and live performances. We truly had a great experience tonight and hope to revisit again to enjoy some live performances or theatre in the future.

Love Hubert for their happy hour menu and their normal menu. The food is consistently on point and the service is great. You’ll need to get in early for both the happy hour menu, which seats you at the bar, or for their dine in service. They don’t really take bookings but I keep coming back here!

An old school restaurant. As you enter the heavy wooden doors and let your eyes adjust to the dimly lit landing with stairs leading down to the restaurant you notice the thousands of miniature alcohol bottles lining the walls. I am fascinated by history, so I took my time looking a all the little bottles and labels, some of them over a 100 years old! There are more on the next level down and as you finally descend into the basement you are greeted by a pleasant host. We had a party of 4 on a Tuesday at 8pm and were seated right away in the main room to the right. There are two very nice and old bars in the restaurant that you can sit at while you wait to be seated. The wait staff was a little overwhelmed, but I didn't mind the wait too much. We ordered the snails, the fried cheese, fish of the day, steaks, mushroom, patè and several drinks. All the food was absolutely excellent. We had a member of the party with several complicated food restrictions and they did a wonderful job of going back and forth to the kitchen to finally figure out what they could serve her. The presentation was simple, but the food was delectable. Absolutely recommend coming here, especially for a romantic evening or special occasion. I was especially impressed that they had proper steak knives, those that know, know what I mean. 😉

You honestly can’t go wrong with Hubert’s happy hour menu (4-6PM). I mean... $10 burgers... $5 gin and tonic??? Amazing.
Between two people we both got a burger each and additionally one of everything on the rest of their menu because why not???

The approach may not be promising, an Ezy Mart opposite, at the business end of town, and on a street named after perhaps one of the colony of New South Wales more dubious Governors sent out to clean up the graft and corruption in the Rum corps. Few remember today that the early Sydney economy ran on a currency of hard liquor. Indeed it is slightly fitting that Hubert feels a little as though one has stepped into an off license Cabernet club of the prohibition era. But, I digress. It is 2020 and in the middle of a pandemic, the slight easing of social restrictions have allowed me to descend the oak lined curling staircase that takes one into the warm and dimly lit Hubert. It is French, there is live music Including a snare drum, it’s a bit Gershwin Rhapsody in Blue. There is a bar - Bar Normandy and it is long and high and neatly stacked like a Dickens curiosity shoppe. The are drinks - any drinks you want, by the glass or by the bottle and by the magnum...and they are expensive. But somehow real life is forgotten in here and that is a valuable thing in times like these. Then there is the menu. It’s all classic French bistro - all very Larousse Gastronomique. And it arrives, it looks delectable, it tastes perfectly French. It is indeed parfait. Is life a bit ordinary right now, are you unhappy? Go to Hubert; eat well and forget the world for a moment.

We went on a Saturday night for a 7pm dinner and the place was packed and we were advised we would get a table at 9pm if we wanted to wait for the restuarant. We opted for the bar instead and we were first in line. The bar menu is a little bit different to the restuarant dining menu but it is definitely substantial enough and we were able to get the pate even though it had the little * to state it was set time only. Overall food was delicious and amazing, although I do have preference for the simple garlic& herb butter escargot whereas Hubert cooks it in an XO sauce (still delicious), beef tartare was devine with matchstick fries (although we wouldve loved to add on an egg yolk and tabasco - not sure if they offer this as it wasn't on the menu or to be seen with the other patrons orders), steak frites was delicious as well as the cherry clafoutis. Don't forget to get some crusty outside and super fluffy inside bread & butter to go with the pate 👌

Beautiful retro ambience hailing from the early 1920s. Slick interior adds a certain class to the atmosphere. Musical entertainment in the evening also helps to foster this mood.
Hubert has quite a large array of drinks available from cocktails to champagne (real champagne). The food on offer is a nice blend of French with modern elements. The pigs blood is a must order!

When Hubert first opened, there was a lot of hype surround this French inspired restaurant. It was the “place to go” and bookings were practically impossible. We went a fair time after the hype had died down, which allowed us to get a group booking at a reasonable time.
Entering from Bligh Street, you’re met with a huge wooden door and then the spiral staircase down to the restaurant is what strikes you first. As you stroll down this staircase which is lined with bottles of alcohol and dimmed lights, and you feel like you’re stepping back many years.
As you enter the restaurant, there is a bar to the right and a huge dining space of tables, booths and feels like you’re in Europe. Fringed lamps, candles with dripping wax and a stage with a piano is set up and as waiters move around the room, it feels vintage, romantic, classy and sophisticated.
Whilst the restaurant is expensive, the banquet menu was extremely good value. For $85, you get 10 courses to share, needing a four-person minimum for the meal.
Beginning with bread and charcuterie is good to pick from whilst you’re setting in to a drink or two. Don’t fill up too much as there is a lot of food ahead of you.
The duck parfait was super cute: a plate of liver mousse, topped with bread “ducks”.
The market vegetables with pickled mussels and aioli were colourful and fresh.
One of my favourite foods is beef tartare and this one here is good quality wagyu served with some extremely nicely flavoured French fries. The main dish of the evening is a whole chicken with bread sauce, extremely moist and easy to devour (if you’re not already too full).
The small strips of layered potato in a buttery sauce were incredible and with a salad of red velvet lettuce and herbs made the sides to our main.
What else could you have for dessert, but Crème Caramel! Light and tasty, made with egg custard and a bitter caramel.
If you do want to try a little more, there’s a $125 banquet too. Ala carte would suit a duo of diners, but any more than that, get a banquet as it allows you to sample more options, and the key favourites from this top restaurant.
The drinks are high quality, the wine list is incredible and the service is impeccable. The waiters are efficient and unobtrusive and food comes out in a timely manner. Highly suggested for your next classy dining experience in Sydney.

Restaurant Hubert has to be my favourite restaurant in Sydney hands down! Fine, intimate French restaurant where the service is second to none and food is impeccable. Menu is on the smaller side although every dish is cooked to perfection. The Malakoff, Buvette Steak, Pommes Anna (the most delicious sauce, I could bathe in it) and the Murray Cod Grenobloise are absolutely flawless!! Even the cultured butter is addictive, you will be tempted to ask for bottomless baskets of bread! Perfect spot for date night!

The service was great until the end when we were waiting for the bill and were clearly getting ready to leave when the host rushed us to leave due to 'mobility issues' haha wth?? My boyfriend took me here as a surprise for my birthday and I was BLOWN away! An underground French restaurant playing jazz/soul music, dimly lit surroundings with beautiful art and an amazing romantic atmosphere.
The duck parfait was a stab in the dark, I haven't had anything like it and though I enjoyed the first bite, I wasn't quite feeling the aftertaste. It was a miss for me but it is my first foray into French cuisine! The duck parfait came with bread and butter and I am not sure what kind of butter it was but it was MAGNIFIQUE! So good! What kind of creamyness was I tasting? The best butter I have ever had in my life!
The chicken fricassee! 😚👌🏼 *chefs kiss* Definitely the highlight of my night. The chicken was so tender and so well cooked. That white sauce underneath the chicken... I don't know what it was exactly but it was SOOOO GOOD with the chicken! Amazing! I was so impressed!
I was hesitant with the kimchi gratin because I love kimchi so very much and am very picky with it however I was genuinely surprised! Crunchy kimchi, didn't retain any of the spicyness of it but was still really tasty!
And then the Fruits en Surprise for dessert and yes wow. I love fruits, sorbet, and ice cream! I especially loved the guava(I think it was guava. I am so bad with fruits) and the lemon! The strawberry wasn't fresh so that was a bit disappointing but overall I loved it so much!

Must-try in Sydney, how cool is it to eat in a live jazz club with a private theatre. The second time I went was not as amazing as the first though (this always happens duh). I tried my first 1kg steak here in Hubert and it was absolutely worth it, my parents loved it for my mum's 50th birthday. Everyone should not miss Vacherin - the meringue dessert and the big mushroom omg YUM!

I have been meaning to dine ever since it was highly recommended by Jamie Oliver, and that's how I found out about it. I dined with my advertising friend to have our apperitif, and we just decided to eat small portions and we tried a few ones. All I remember, they were all really good! But the ones that made the most mark were the duck parfait, malakoff and escargot! It was packed even though it is a weekday and we arrived there like 6pm. People don't stop coming so I can understand why the waiter was very insisting if we have want more drinks or any order. The music was just about to start when we were about to leave before 8pm. It was an amazing first dining experience. SO hard to find good French cuisine in Sydney, Hubert delivers. Even the way they present the food when you order, all consistent on how you see photos on the internet. Quality in every order you get. Validates the price and gives justice to your experience. Definitely I will be back this 2019 for their movie thing.

Located in a basement, the restaurant has a drinks bar where you can relax with a drink while you wait for your table. Tonight I felt like some snails; if you are a fan of garlic (I'm not really) there will be enough in this dish. Chicory was the waiter's recommendation, and these two dishes together made for a very nice meal if you have a good appetite but had a big lunch. The wine list is good, and the delicious bread was complimentary. I always ask to sit at the (other) bar, regardless dining solo or partnered. Come here for the atmosphere, the music, the food.

The chicken is cooked to perfect and served boneless (other than the drumstick) and the skin is light and crispy.

you'll definitely ask for more complimentary bread to soak up as much sauce as possible. No room for wasting such a delicious flavour.

Live music only on Thursdays. They don't accept reservations unless u have 6 or more pax in your group. We arrived at about 8pm and waited about 15 mins for a table while we sat at the bar.

They allow u to try the wines before purchasing which is nice. A glass costs about $15 but they sell more varieties in bottles.
Service was great and our tap water glass is always topped up. The ambience is old English and perfect for a night of conversations. Love the candles!!

Just enjoyed a wonderful meal. Upon checking into hotel after a 9-hours flight from Hong Kong, I contemplated ordering the usual less than stellar room service, but adventurous spirit prevailed and I turned to trusty Google for late night dining options, which is sparse in the CBD area. The reviews convinced me to make the 10-min walk from Sheraton on the Park.
Restaurant Hubert is in the basement and has that chillaxed speakeasy vibe. Clientele seems to be mostly hipsters and young professionals. I settled myself into a table near the bar. Big drink menu came first followed by the bar menu. Although the waiter had to seek permission, I asked for and was given the full dinner menu, which may be usually only served in the separate, nicer sit down area.
Upon request, the waiter suggested the Bavette Steak and Pommes Anna. I'm not usually fond of potatoes but I sure was glad I took him up on his recommendations. The combo was awesome! Pair the whole thing with some nice craft beer, and I would say this was one of the best late night meals ever. I would highly recommend this place for a small intimate friendly gathering either for the great food or just drinks. For me, this will definitely be a future go-to gastropub for my late arrivals into Sydney!

An authentic piece of Paris in the centre of Sydney CBD. Dark and atmospheric you know you're in for a treat the moment you descend the staircase. Food is perfectly French, we had the whole goose, paté, steak tartare and boudin noir. Wine list is solid but quickly becomes expensive. Reservations currently not taken for tables under 6 but the bar is a great place for a warm up Martini. The main restaurant had a grand piano in it and next door there is a theatre where they put on cabaret. A great night out and also a good for a long Friday lunch.

I don't think there's a more special place in Sydney. It's my favourite. By far.
Walking down the wood laden walls your ears are slowly filled with glasses clinking and quiet murmurs as it gets deeper down.
When you arrive the atmosphere is grand. A bar to the right a grand dining area to the left, you feel transported to another time. A time where French dining is at its best and jazz is the standard.
I mean what can I say. The food (pre my vegan days) is just amazing. From the humble table bread to the urchin to the buttery fish of the day to the sauce of the steak frites.
There's never been a place that's made better non pretentious delicious grub in a Sydney in a more beautiful venue.

Came across this on a blog while looking for a late night eat. We walked in to what looked like a set of a movie! Just that intriguing. Two levels down and we walked into a bustling restaurant, despite it being well past midnight. We were sat at, what I would consider, a very small table for four. However having ordered, we were moved to a bigger table upon request.
Unfortunately we could only order off the late night menu (our fault), but that had some very interesting options.
Having ordered the food, we were trying to pick our drinks from an extensive menu. And when I say extensive; think two to three pages of whiskies, around four to five for wine... It was a task and we were pressed for time as their bar was closing. The maître d’ was very helpful with our beverages and took his time to explain in detail, thus making our choice a tad bit easier.
The beverages and the food was just delectable! The steak was beautifully cooked! The snails were perfectly done and so was the burger! Unfortunately we didn’t have enough time to finish our meal as the restaurant was closing. Albeit, we were informed well ahead that we had limited time as they were on a strict license.
Such a shame and we wish we’d gone in earlier... Was a lovely meal and well worth the money spent.
Special note out to our waiter. Unfortunately we could not ask him for his name. He was the highlight of the night, along with our food! His knowledge and suggestions on the food really helped us, but it was his attitude and bubbly character that added that extra bit to our meal! To be frank, when we were seated initially, it was a rushed seating at a smaller table and we didn’t feel as welcome as we would later on. Once the waiter took charge of our table, our views changed drastically! Thank you for that!

This place is living to its reputation, a must-visit restaurant but overpriced. The location is amazing and takes you to whatever Americans think a French bistro is. The service is top notch and you'll definitely be well taken care of.
The food, however, is disappointing and represents all the things about the pretentious French cuisine of the Sydney French restaurant scene - it's average but somehow comes with the "French tax" price tag. The dishes come so quickly that it's obvious that they were waiting in the oven for a few hours already. The French fries were frozen (even still on the inside), quite disappointing when there are only 6 side dishes and that they are not cheap.
Probably won't come back, but glad I got to see what the fuss is all about.

Restaurant Hubert has been a long time coming for us. With no bookings and sometimes difficult to get a table, we went early on a Monday to ensure success.
After descending two flights of stairs and an amazing collection of small bottles (see photo) we arrived to be greeted at the crossroads between the bar and dining room. The decor and atmosphere of Hubert were exquisite, with rich timber panelling and romantic candlelight.
Treating ourselves to a pre-dinner drink in the bar, it was not long before we were led to the dining room, where we were seated and an excellent waiter quickly helped us with a trio of entrees. The dining area was equally well decorated, with several framed pictures against the back wall and an ambience that encourages conversation. The Malakoff was cheesy and good, whilst the Duck Parfait and Hubert Baguette tastily staved off hunger in anticipation of the mains to come.
The drinks menu is extensive, with a vast range of beers from across the globe and ample cocktails, both modern and traditional. The wine list is also plentiful, though we didn't take the evening quite that far. After ordering another round of drinks, we progressed to choose a shared main of Chicken Fricassee with an assortment sides to share. These included the Salade, Lentils Vinaigrette and Pommes Anna.
Although the sides were excellent, the Chicken Fricassee, which we had heard very positive things about, turned out to be slightly disappointing, taking a back seat to the entrees and sides.
Pushing on, we also ordered two desserts to share between the four of us. The Creme Caramel was rich and difficult to finish, but the Quince Clafoutis was excellent and well worth the wait.
Overall, Restaurant Hubert is a lovely establishment, well decorated with a spacious yet intimate atmosphere. The food was good, though I would recommend selecting a main other than the chicken. There was also one bearded waiter who was a bit rude, but the gentleman that served us the majority of the time was exceptional.

Once you push open the big wooden doors and walk down the staircase lined with thousands of miniature bottles of alcohol, be prepared to be transported to an opulent postwar French restaurant and bar. You will be faced with the difficult choice of heading to the Bridge bar where food and wine is more on the fancy side -- great setting for quiter dates, or to continue down the stairs to the Hubert's restaurant or bar. If you turn to your left, be prepared for a deliciously hearty meal, surrounded by walls lined with thousands of wine bottles, or head to the right to have a more relaxed chat at the bar. Either way, the ambience and great service alone, will not disappoint.

It starts with the discrete entry through heavy wooden doors in a quiet part of the city, down a dimly lit circular stairway until you arrive at an atmospheric 1920's style French restaurant playing very cool and varied music. The bar is stacked with spirits, full wine racks above the bar, and a decent selection of local and international beers on offer. And then there's the food. Every mouthful is bursting with flavour, with richness only the French can pull off. We had nine small dishes (though not stingy portions) between my wife and I, including two desserts, thoroughly enjoyed every morsel, and had to be rolled back up the staircase at the end of the night. The standouts for us were the oeufs en gelée and the tartare de thon. We'll be back!

Awesome place. Heard a lot about this place and usually when ppl build things up you're left disappointed as expectations are never quite met We'll I'm happy to say, not in this case.
Right from even you enter this place is different and something you'd expect to find in the cooler Melbourne scene. Well luckily this is a gem of a spot in Sydney and honestly one of nicest places to dine. Food was amazing, drinks menu was diverse and the band seamlessly eases into the background without overpowering music to disturb the conversation at the table. Such a refreshing change and really takes the whole experience to a new level. Great for couples and smaller group settings. Highly recommend.

Shared a lovely long birthday lunch with girlfriends here (plus a 4mo!) and have to say that the whole team went out of their way to make us feel welcome, didn't make having a baby awkward at all, it just helped make the day that much more special for the birthday girl / mum! Exemplary dishes at reasonable price. The entrees, duck parfait and escargot (snails) were appropriately sized, however the escargot was hindered by the quality of the snails themselves. The duck parfait was beautifully seasoned, exemplified by the accompanying baguette, which was soft inside and crispy, but not hard. The mains beef tartare, and Boudin Noir (blood cake, like blood sausage) which was delicately seasoned, had very smooth potato puree accoutrement. The tartare's potato chip condiment brings a delightful contrast to texture and taste, but is not for everyone. The Pommes Anna, a layered and fried potato stack, is amazing, making me consider how much effort went into its preparation. To pair with the mains, the Semillon chose a Pinot for me, which was not great (the wine or the choice, for that matter). Finally, I chose the Vacherin dessert, a meringue, lemon leaf ice cream with Yuzu jelly, for the purpose of a light, refreshing dessert, but the heavy handed application of cream is too filling as the conclusion for the bistro styled meal. The ambience of Hubert is quaint, and a welcome juxtaposition to the surrounding cityscape. The waitstaff are filled with polite energy, and are amicable enough. I will return soon, as Hubert will probably be excellent for dates.

Hubert has been named the best restaurant in Sydney of 2016 for good reason. It’s definitely worth it. My boyfriend and I sat at the side bar (this one they served the full menu at - the one to the left of reception they do not) and ordered six plates, including dessert: pickled octopus, duck parfait, the whole chicken, kimchi, steak tartare (with really good french fries) and creme caramel. We both also had a glass of red and a gin and tonic. We were stuffed. The only menu item we ordered I could’ve done without was the pickled octopus. Everything else was great. The kimchi I’d especially recommend. And for all that, and a tip, we hit about $250. Which definitely is not bad. Also a bit of a side note: when I went, the door facing Bligh street was locked (or I was trying to pull rather than push, who knows), and was lucky in that someone was coming out as I was trying to get in. Keep an eye out.

Hubert is a French Restaurant located in the Sydney CBD Area. The place looks like a theatre. When you start wandering around the restaurant you may see the stage where live music can be performed. It has such a romantic atmosphere which is best for anniversaries, special days or etc with your partner. Despite of its expensive options in the menu compared to the portion of food, it has great taste of Prime Beef Tartare and Chicken Fricassée which were my favourite. I have not had a chance to try cocktails or desserts but probably they would be one of the best in town due to the quality of Hubert. Waiter and waitresses are also friendly in the place and they have good speed for the service.

Hubert was our first dining experience in Sydney, and it did not disappoint. We started in the bar (because I don't think they take reservations, but it's worth the wait. And I'm not that patient) with cocktails, local oysters (yum) and paté, then moved to the main restaurant so we could experience the full menu and wine list. We ordered a ribeye - it came out and was about the size of my thigh and cooked to perfection, and let me tell you, I was not mad about it. Cocktails and wine list were superb. And the atmosphere... The whole thing felt like a speakeasy. It's underground. Literally, in a basement. There is a stage with a red velvet curtain. There are candlesticks in bottles. Fantastic place! Hubert is definitely one of my favorites places in Sydney. I love the atmosphere and live jazz. I like to go for a few happy hour drinks and then move to the restaurant area. I think is important to point out that the food is very modern french style (don’t expect the traditional french food) and it’s amazing! The wine list is also incredible and goes from 50$ to 5000$ so it’s suitable for different tastes and pockets. The service is always good (from the host, to the bar and to the floor staff).

Find the door and head down the stairs to a beautiful, atmospheric space of wood, candles and warm lighting . Have always sat in the bar space for a late night drink and feed and it’s been excellent. Extensive range of wines, as you would expect, to match with your pates or steak tartare or escargot.

Very good French food in a speakeasy setup, went for a corporate function in some sort of auditorium back room where we had a little jazz band playing. Definitely did the trick for a great intimate experience. Dishes were traditional French, not the most refined cuisine but well executed and with good products. The bar itself is quite nice, with lots of wood and a real speakeasy feel to it.

My partner and I went here for dinner a couple of weeks ago, as we heard it was a must-do on the Sydney dining scene.
We were blown away at the service of Tristan (I hope I spelt that correctly!) in particular. He provided incredible guidance when it came to the food and the wine pairing. This was hands down the best dining experience we’ve had.

Went in last night on the basis of other reviews and enjoyed Hubert very much. They only accept bookings for 6 or more so expect a wait if it is a busy night. We got in before the rush but still faced a 30 minute wait so opted for the bar seating (and menu). I had the steak frites and throughly recommend. Excellent piece of meat and cooked perfectly rare.

We were given a Christmas gift voucher to Restaurant Hubert by our son who read that during January there was jazz every night with dinner. As you enter you will see the restaurant is down stairs, the immediate effect upon entering is that of a Paris cafe complete with booths guarded by red curtains and candle light tables. The food is wonderful and a very good wine selection, I used the services of the sommelier who advise the perfect wine to complement the food we were having. A note the wine prices range from about $80 to $400 a bottle he did not point me to the top end of the list but chose a good bottle of wine for the meal which I appreciated. I highly recommend the restaurant as the overall experience is one of sophistication with a relaxed style. Loved it.

Easily one of Sydney's best restaurants (if not the best). If you haven't eaten here before do yourself a favour and grab a table! I particularly like the duck parfait. There's also a great selection of drinks, and service is awesome. Highly recommend.

Hubert's reputation is really well-earned. As you walk down the steps to the restaurant, presumably you pass through some sort of advanced time--dilation field that transports you to a classy bar in France during the war. The music, atmosphere, bar and lighting is just top notch, and the staff are lovely. And the food, good heavens the food. We had a banquet and literally everything was delicious: Duck Parfait and Chicken Fricassee were absolutely off the charts yummy. Be prepared to spend a bit, not because Hubert is necessarily expensive, but because you will want to spend it.

The menu is truly a tribute to a French palate with modern influence. Beautifully presented and flavors are amazing.the bar is always stocked with a fine selection of spirits. Bar Manager just needs to keep the items on the menu stocked.
Entertainment is always pleasant although my cup of tea.
Definatley a great place to entertain being a crowd between 30-45 years old or impress a significant other.

Popped down to Hubert's last night to see The Rookies, a jazz band from Melbourne, perform. I didn't eat anything so can't comment on the food but the place itself is special enough to warrant 5 stars. The wine was felicitous too. Definitely something for a special occasion. Super cosy rooms at the end of a winding staircase in the middle of the city. Felt a little like being in another time and place.

Sydney is not known for it's food scene as much as other cities e.g. New York, Melbourne etc so a restaurant that serves tasty quality food here is in very high demand. we got to Huberts at 6pm prior to going to the opera and every table was taken, including the bar for waiting for tables and there were groups standing in the foyer waiting for table as well. there's very few tables that can be booked and luckily we had our concierge at our hotel arrange a table otherwise we would have a 1-1.5hr wait which I'm sorry is just ridiculous to wait for a table no matter how good the food is. the dishes were savoury and i would say the equal to a family run bistro in France, both tasty and savoury.

Talk about a traditional meal. Hubert's is an old style meats and fish place. It's a very popular "high status" resturante that you really need to make a reservation. I went with a big group which is perfect because it's definitely a sharing "tapas esk" style restaurant. They had a great band playing and the place was pretty much packed. Full drink menu and wines.

This French restaurant was absolutely delicious! Upon entry you are greeted by a dark light filled downward spiral staircase transporting you to a "secret" location. Upon entry to the restaurant you see a sea of candle lit tables across the room.
The food was delicious. We went with the $149pp set menu. The Escargot and the 1kg Wagyu Tbone steak (sliced on the bone to be shared) were my favourites. The steak was cooked to perfection and the seasoning was subtle but present enhancing the flavour of steak.
The wait staff were friendly and always there to help with food, drinks, and other requests.

Food is excellent. If you enjoy jazz the music is excellent also. Nice ambiance. May be a little hard to find as the restaurant is below ground. They don’t always take reservations so check online. If there are no tables available you can wait at the bar which is also very nice.
